3 ways with beef mince

  • Spiced beef stuffed pita
    Serves 4 Prep 10 mins Cooking 30 mins
    500g Coles No Added Hormones Beef 3 Star Regular Mince
    ½ cup (35g) panko breadcrumbs
    1 Coles Australian Free Range Egg, lightly whisked
    1 brown onion, grated
    2 garlic cloves, crushed
    ½ tsp ground turmeric
    1 tsp ground cumin
    1 tsp ground coriander
    1 tsp smoked paprika
    75g fetta, crumbled
    2 tbs chopped flat-leaf parsley
    6 pita pockets, halved
    ⅓ cup (80ml) olive oil, for frying
    Extra chopped flat-leaf parsley, to serve
    Lemon wedges, to serve
    1. Preheat oven to 200°C. Combine the mince, breadcrumbs, egg, onion, garlic, turmeric, cumin, coriander, paprika, fetta and parsley in a large bowl.
    2. Fill the pita evenly with the mince mixture. Heat a little oil in a large frying pan over low heat. Add 4 of the filled halved pitas to the pan and cook for 4 mins each side or until golden and mince is cooked through. Transfer to a baking tray. Repeat with remaining pita, drizzling pan with a little remaining oil after each batch. Bake for 8 mins or until the mince is cooked through.
    3. Cut each pita half in half and arrange on a serving platter. Sprinkle with extra parsley and serve immediately with lemon wedges.
    Smashed dumpling tacos
    Serves 4 Prep 20 mins Cooking 10 mins
    500g Coles No Added Hormones Beef 3 Star Regular Mince
    2 garlic cloves, crushed
    1 tbs finely grated ginger
    1 tbs lemongrass paste
    2 spring onions, finely chopped
    1 tbs soy sauce
    2 tsp fish sauce
    1 tsp sesame oil
    8 Coles Street Tortilla Wraps
    1 tbs olive oil
    2 Lebanese cucumbers, chopped
    Coriander leaves, to serve
    Spring onion, finely chopped, extra, to serve
    Toasted sesame seeds, to serve
    Chilli oil, to serve (optional)
    1. Combine the mince, garlic, ginger, lemongrass, spring onion, soy sauce, fish sauce and sesame oil in a medium bowl.
    2. Place 1 tortilla wrap on a clean work surface. Spread one-eighth of the mince mixture over the tortilla in a thin layer, pressing to stick. Repeat with the remaining tortillas and mince mixture. Heat one-quarter of the olive oil in a large non-stick frying pan over medium heat. Carefully place 2 tortillas in the pan, mince-side down, and cook for 3 mins or until the mince changes colour. Turn and cook for 1 min or until the tortilla is golden. Transfer to a plate. Repeat in 3 more batches with remaining oil and tortillas.
    3. Loosely fold the tortillas and arrange in a shallow serving dish. Top with the cucumber, coriander, extra spring onion and the sesame seeds. Drizzle with chilli oil, if using, to serve.
    Beef baked rice paper dumplings
    Makes 24 Prep 20 mins Cooking 20 mins
    500g Coles No Added Hormones Beef 3 Star Regular Mince
    2 garlic cloves, crushed
    2 tsp finely grated ginger
    2 spring onions, finely chopped
    1 tsp sesame oil
    2 tsp fish sauce
    1 tbs light soy sauce
    1 tbs cornflour
    12 rice paper sheets
    2 tsp sesame seeds
    1 spring onion, thinly sliced, to serve
    Dipping sauce
    2 tbs sweet chilli sauce
    1 1/2 tbs soy sauce
    1 1/2 tbs rice wine vinegar
    1. Preheat oven to 220°C. Line 2 baking trays with baking paper.Combine the mince, garlic, ginger, spring onion, oil, fish sauce, soy sauce and cornflour in a large bowl.
    2. Fill a wide, shallow bowl or baking tray with water. Dip a rice paper sheet into the water. Remove and shake off excess. Place on a clean work surface. Cut in half. Place 1 tbs mince mixture in the middle of 1 rice paper sheet. Fold the rice paper sheet over the filling, to enclose filling. Place the dumpling, folded-side down on the lined trays. Repeat with the remaining rice paper sheets and mince mixture to make 24 dumplings.
    3. Sprinkle the dumplings with the sesame seeds. Bake, turning halfway through cooking, for 20 mins, until the mince is cooked through and the rice paper is crisp.
    4. Meanwhile, to make the dipping sauce, add sweet chilli sauce, soy sauce and vinegar in a screw-top jar and shake to combine.
    6. Arrange the dumplings on a serving platter. Sprinkle with the spring onion and serve with the dipping sauce.
