- Spicy vegetable samosas with roasted chickpeas
Serves 4 | Prep 10 mins | Cook 20 mins
Ingredients:
180g pkt Coles Kitchen Vegetable Samosas
400g can Coles Chickpeas, rinsed, drained
1 tbs Coles Extra Virgin Olive Oil
½ tsp garam masala
½ tsp ground cumin
¼ tsp ground turmeric
2 tbs Coles Greek Style Natural Yoghurt
1 tbs chopped mint
½ lemon, juiced
½ red onion, finely chopped
1 long red chilli, seeded, finely chopped
Mint leaves, to serve
Method:
1. Preheat oven to 220°C. Line 2 baking trays with baking paper. Place samosas on 1 lined tray and spread the chickpeas on the remaining lined tray. Drizzle oil over chickpeas and sprinkle with garam masala, cumin and turmeric. Toss to coat.
2. Bake the chickpea mixture for 15 mins or until golden and cooked through, adding the samosas for the last 8 mins of cooking.
3. Meanwhile, combine yoghurt, chopped mint and lemon juice in a small bowl.
4. Arrange the samosas on a serving platter. Sprinkle with the chickpea mixture, onion, chilli and mint leaves. Drizzle with the yoghurt mixture to serve.
Poutine-style roasted chat potatoes
Serves 2 | Prep 5 mins | Cook 25 mins
Ingredients:
300g pkt Coles Kitchen Roast Chat Potatoes
⅓ cup (35g) Coles Shredded Mozzarella Cheese
¼ cup (60ml) Coles Traditional Gravy
1 tbs chopped flat-leaf parsley
Method:
1. Preheat oven to 200C. Line a baking tray with baking paper. Place the potatoes in a single layer on the lined tray. Bake for 20 mins or until golden and heated through.
2. Sprinkle the potato with mozzarella and bake for a further 5 mins or until the mozzarella melts.
3. Meanwhile, heat the gravy following packet directions.
4. Transfer the potatoes to a serving platter. Pour over gravy and sprinkle with parsley to serve.
