    Fascinating. My hubby has been enjoying buying kimchi and so I’m excited to learn from you how to make it. I’ve been scared of fermented foods as a particular sauerkraut made me very ill once but I’m going to build up my gut health by adding a tiny bit of kimchi very gradually to my diet till it strengthens my gut. Chicken pho sounds delicious too.

      It does take time to get used to fermented foods but yes, it's so good for your gut when done correctly. I admire your resolve in making good steps to do this. Would love to hear how your first Pho or Kimchi dish turns out!
