First off, Happy Birthday to your daughter... We seem to be on the same page when it comes to simple cooking. Salt & Pepper is the KING of taste when it comes to BEEF. Looks fantastic...
I love it! We are alike in that we don't do a traditional Thanksgiving dinner. I ate loads of Picanha at a Brazilian steakhouse yesterday We've done that the last few years.
My brother....Happy Belated Birthday to your Daughter. Oh man...Picanha the Queen of Steaks...I bet your daughter was delightfully please getting a sumptuous meal for her birthday. Beautifully done my brother y'all take care and have a great one. Cheers 🍻
Love this cook and love Papa Joe. Not trying to be all loud and animated for YT, just tell us how it is. One thing I would love to see is more of a timeline. I.e. "this was a 3lb Picahna and at 225° it took ____ hrs to smoke" I'm trying to do my first whole one and can't find anyone that tells you about what to expect for cook times?
I totally understand Brad. Temperature is most important in these types of cooks. At 225, this roast took 90 mns to get to 120. From there, you'll want to sear it to your desired finish temp. Time will be dependent on hot your grill is and how high your finish temp is.
@mamaandpapajoe PERFECT!! Thank you! That was the info I needed! Trying to plan for dinner here and keep MY Mama happy! Loved your video and now am a new subscriber! Thank you for not being obnoxious like most YT'ers. Looking forward to learning from you!
I am struggling to find the dry seasoning mix that you have used for Chimichurri. Al Frugoni Chimichurri- Original is one that I'm looking @ but I don't remember that it is the one that you have used, what is your go to?
Great camera work bro!
Much appreciated Dawg!
What a show stopper! Fantastic picanha👍 I like the added cross cuts to render the fat😊
Thanks a lot Bobbi!

That is one delicious looking picanha and the chimi sauce looks fantastic as well! Nicely done. How long did it take to get to 120 degrees?
Thank you so much for watching Chris. To reach 120 with the grill at 225, the Picanha took about 1 hr 10mins.
Looks delicious
