I love thr tri tip because i take my cuts from the middle for mid rare and the Mrs likes the end cuts with are closer to medium. Nice cook CJ ! Love that sauce especially on sour dough bread !
CJ, We think alike ALOT. I have a TriTip thawing right now. Have not had one in 2 years. Been fighting the Big c since '20 and only 1 more treatment. I had just started filming but I just put that up. Now I'm feeling Better, smoking more often. Just cooking everything more. BUT, that is a snack I will have to try. Here in Mayfield, KY I grab a TriTip I see them local... Dang nice video.

Tri-Tip looks awesome CJ! Being from SoCal, I agree about Tri-Tip being better cooked closer to medium, I'm glad you caught on to that! I like a final temp of 139-140F and thinly sliced.
That is a beautiful tri-tip. Amazing marbling. I love uncle Chris’s steak seasoning. Even use it as a base for dressings. The dill in it really pops well with steak!

So are you saying that you left that in the fridge for a month or was it frozen and then thawed? Also, I’m not that familiar with Traeger grills. But I noticed you have your grate down very low in the grill. Is there a reason for that?
I left it in the freezer KatMa and let it thaw in the fridge. The location of the grate is just a personal preference, it doesn't play a role in the slow cooking of the protein. Thanks for watching.

Surprised that it wasn't mooing when you cut it. I can't cook meat on pellets. Too rare for me.
