I followed your suggestions except I substituted apple cider vinegar (home made) for lemon juice. The first batch became apple pie filling and the second became apple sauce. Questions. How much lemon did you put at the bottom of each mason jar. Secondly once you'd filled the jars up with apple you put more lemon juice in right? Before putting the cap on and placing in the canner. When you were soaking the apples in water , how much lemon juice did you add then please?

When canning sugar free jam, you obviously won’t use pectin so they won’t thicken. You can use chia seeds!! They give it a gelatin texture. There are lots of recipes on Pinterest.
I wasn't making jam or jelly (but was stressing what I was not "adding") - they have "low sugar" pectin or you can make your own from apples - canning chia seeds??? NOT for long term storage MAYBE only in the fridge (one jar at a time) - for my long term storage I use ONLY official canning instructions and not willy nilly bloggers and websites THAT MAY NOT BE SAFE FOR EITHER SHORT OR LONG TERM - I suggest EVERYONE check the recipe to the official website recipes - just because a "blogger" shows her easy peasy canning don't mean she did it right - thanks for commenting!!
THANKYOU!!! Finally someone whose willing to teach me how to preserve fruit to make me healthy instead of making me sick with sugar! I'm intending to make my 1st attempt at canning soon. Can I use this same process with all fruit & not just with apples? Do I only need to add lemon juice with fruit that would otherwise turn brown, & so can I just use the fruit & water for stoned fruit & berry fruit preserves? New&Old I found this way because of not liking sugar besides the fact that people add too much sugar - any fruit that you can "can" can be done without any sweetner or sugar - but many people forget that canning without sugar is like cooking without salt ----- the fruit will not win any taste contests and will not look the same - as far as the lemon juice it will depend on the fruit because some will turn brown and some will not
New&Old oh yes almost forgot - try with a very small batch (you can do one jar if you like) and see if you like that fruit done without sugar than move on to bigger batches - you will be able to see what it looks like and how it tastes before you invest in doing a whole lot - even the same fruit (such as different kinds of apples) will have different amounts of its own sugar effecting the end product
jmarylastone Thanks! Good idea about small batch 1st. If it then needs a little sweetness added I might just add some juice, like you did in one of your other videos. Or if need be I might try adding a small amount of honey.
wait on the honey - some canning - and I am not versed on which ones - but some canning you can't use honey - you will have to do some research on that

oh my yes yes you can!!! - hot pack for me is best/easiest - the "basic" way is check my other videos for how I do fruit puree - you only have to "can" for 10 minutes for citrus - any lemons/limes/grapefruit/oranges/tangerines if you use hot pack you only have to water bath can for 10 minutes to kill off any "beasties" - I found a bunch of lemons on sale and made my own lemon juice - now if you do can your own lemons or lime you cannot use them for canning OTHER items that call for added lemon juice because you don't know the acid level in home canned citrus - peel and deseed ... chunk them or mush them if you like ... and can them --- SUPER!! and when I can my citrus I don't fuss about the pith that everyone says is bitter - I like the taste of it but you can remove the majority of the pith when doing grapefruit

Hello jmarylastone: Do you find using that specific Granitware water bath canner on the stove, that condensation forms under the lid and drips down the Granitware water bath canner and pools on your stove? I hope you can answer soon, and thank you
hmm, no I do not have that problem if the canner sets "proper" on the burner - I have 3 graniteware water bath canners (one is a giant) and when I have to use more then one at a time the other burners do not let the canner sit proper (level and straight) and I sometimes have a problem then

the lemon juice is to help keep the apples from turning brown - add as much as you feel you need or as little as you think you need

I can my peaches, pears, & apples with out sugar. Just use water. No sugar or honey or pectin🎉

I don't peel them - I don't peel any fruit or my tomatoes but some do not like that pieces of "roly poly" peel so it is up to you - thanks for asking
