My personal favorite is GT3. The RPM meter actually shows the RPM in all camera modes (unlike GT4 where it's only really shown in bumper/roof camera). That said, GT4 bumper/roof meter is much better than GT3s.
You manage to replicate the spirit of how GTS' lighting looks like. I love that. Motion blur needs a little bit of tuning down however but goddamn GT7 can't come soon enough.

If you want to explore the track surrounding, search up Honda Aoyama Center (the one building in GT5 achievement quest), it's on the main straight and you can follow the streets from there.

This is the more accurate version of the R246 track mod, better than one of the version which features huge signs of anime graphics. Well done DDM.
