Can you confirm the amounts of Mascarpone cheese, green tabasco and chives? Looked like 1 cup of mascarpone, 1 tablespoon of green tabasco and 1/2 a cup of chives. Is that right?
Just a thought or an idea, serve the trout whole with the cream cheese mixture as a condiment, sort of like a tarter sauce. This would also go well with smoked salmon or any other smoked fish.

I don't think it's good idea to brine the trout for that long. It turns out much too salty IMO
