Do you use all organic? King Arthur has been my choice learning a bit about the company. I can have a tendency to have gluten issues. Exactly why I started sourdough starters. Easier on the gut. I have a whole wheat n a A.P. each going about 3 months now. Are you concerned about GMO's?
I do like King Arthur as well! It can be expensive. I try to keep things as natural as possible, I enjoy grinding my own grains into flour. I buy Palouse brand grains and I really like those.

So I made the pizza dough, the flavor was Fantastic, but it was chewy no crispy of fluffy, any suggestions, I don’t have a pizza stone could that be the issue? Over kneading? Dough too cold, once it had risen it was too late to make dinner so I popped it in the fridge and we made it for lunch
Yes! Sourdough starter and sourdough discard are the same thing. The discard is just the sourdough starter you're not currently feeding or baking with. It's called discard because it often gets discarded during feeding!
You can use an all purpose flour instead of bread flour if you like! It will absolutely work, it might not turn out the exact same but you would just need to play around with it a bit!
I love your easy to understand tutorial,,but I put my beginning flour in the food processor with all the mixings,,, then I took it out and began to knead,, 😂 I hope it comes out as good as yours,,,I'll update,,,lazy baker😂

Looks good, but neopolitan is usually made with 00 flour for that super soft crunch outside crust.

Please use grams instead of cups. It's easier for a lot of people.
