when we moved from Tennessee to Kentucky and I made a new starter....I was surprised how much different the wild yeast tasted!.....the TN one was good but my KY starter tastes just like yeast you buy at the grocer.....it was a nice surprise!

In the past few years I've been perfecting my "classic" bread and pizza recipe and eveyone who had the chance to taste it says it's pure deliciousness. So now I would like to make the extra step and learn the magic art of sourdough baking! I feel very inspired by all these incredible recipes! Unfortunately, my oven's structure doesn't allow me to use a dutch oven or a pizza stone because they'd be too heavy, plus it's a small oven, so I was wondering if sourdough pizza could bake well also into a regular baking tray. Any recommendations on a good kitchen scale. I have not been able to find a scale that works well. Love your videos. Thank You. I just discovered your channel and your videos are a joy and you are a gem! I've been cooking all my life but had a fear of flour and started making pizzas a year ago with some really great success. I have yet to do a Sourdough most of the time I do a New York style or a New England Greek pan pizza or a Cape Cod bar pizza. I do have a question Believe it or not, with the water in your starter you're actually at 77% hydration. Once I get above 65 or in that range it is one sticky gooey mess using bread flour. How do you manage to get it to resemble dough? I should mention I use a KitchenAid stand mixer. Really hoping for some luck on my starter as per your other video cuz I just threw away a bunch of flour on a failed first starter attempt. Wish me luck! Keep up the Great work, cheers!
