The man is a master and it's forgivable items fall out of his hands because of his age.
Big chance this man is more into the development of desserts etc. than service nowadays !
Well, at least there are three comments complimenting this beauty of a dessert as opposed to the ignoramuses complaining about the portion size or the fact that something fell out of his hands (I didn’t notice this, but even so, who cares). I’ll add the fourth compliment. It’s gorgeous. Rhubarb and vanilla are the core flavors and they are an absolute delight!!! What better way to balance them than some temperature contrasts (the cold sorbets and the warm compotes) and some subtle herbal elements in the oxalis and the basil. I can taste it on my palate right now, it is a masterpiece🤩

So what something fell out of his hands he's one of the best pastry chefs in the world do you even have any clue on what restaurant work is actually like it's called accidents happen even in 3 Michelin star restaurants.
You know, they are very stingy, this is the characteristic of all Michelin chefs
You dont NEED more than a portion like this, you might WANT more but the portion is balanced and well within the actual calories and stuff that you need.
In these places its not what you want its what youre getting. those chefs know more than youll ever know about food
