Homity Pie | Cheese Potato Leek

  • Nobody seems to know what a homity is, but I do know that homity pie is delicious. Homity pie is an open-topped pie or flan filled with potatoes, cheese, onion and leeks. Homity pie was invented during WW2 when food was rationed and meat was scarce. In the Sixties, homity pie was popularized by Cranks Vegetarian Restaurant in London. At the time vegetarianism was fairly uncommon, but these days it isn't and homity pie is one of those welcome vegetarian dishes that isn't trying to emulate a meaty version. No homities were hurt during the making of this video.

    The upturned bowl is a nifty tip . Wholemeal crust, spuds , leek and cheese, what's not to like. I had homity pie pie at a health food shop/cafe in Solihull, earl 70's, now on the to make list.

    Mr Keef, about the tops of the leek, they are good to eat, just don't know why some do not eat it, A good cleaning and dicing and in the pot on a slow boil will make them tender and they make a great cream of leek soup.

    This looks amazing. I don't think we Americans give leeks their due, it's so hard to find good quality leeks around here. But this, I have to make this. Thanks so much for sharing.

    Aye Keef, that's a reyt good description of homity pie! It's a proper Yorkshire gem, it is. Folks might not know what a homity is, but once they try that pie, they'll be hooked. Potatoes, cheese, onion, an' leeks in an open-topped crust-what more could tha want? Grand to know it came about durin' WW2 an' got a new life in the Sixties thanks to Cranks. Vegetarian or not, everyone should give homity pie a go. No homities harmed? That gave us a good chuckle! Cheers for t'video Keef!

    ''too much time'' that's the problem whilst these recipes are delicious for being home made. They take a long time.

    • @Keefcooks

      3 hours? Not my recipe. Most recipes involve short periods of prep, longer periods of cooking when you're doing nothing, and maybe some finishing and plating up. I can't think of any meal where I've had to work at it for 3 hours solid.

    yummm leeks cheese potatoes and onions......that cannot taste bad in any way, and im as big a carnivore as they come. The one thing id change is the pastry. Im not keen on wholemeal pastry and i dont like the way it works so id use normal shortcrust or maybe cornish pasty pastry which is a little more solid.........and theres ofc always the temptation to add a little bacon but to be honest i think this would be flavourful enough without it.

    • @Keefcooks

      The basic one you need is a digital probe thermometer. If it says 'instant read' that's good, because the one I have takes a noticeable amount of time before displaying the temperature. I've also got an Infra Red thermometer - this is a bit like a gun that you point at a surface to get the temperature - it's good for testing oil and other stuff, but not for telling you if your chicken is done.

      @Keefcooks  5 ปีที่แล้ว +1

      British-style flans DO have a crust, like a quiche. If you try to make this without one it'll probably fall apart. You may be thinking of a Spanish-style flan, which is a set custard.

      KeefCooks that's what I'm thinking. Messy's Ok. Food is important and this is a bit like a rösti I used to eat in Berne. Not as much potato & cheese but still good stuff to eat and if cooked in iron skillet instead of pie plate I think it would work. Of course it would need temps lowered about 20* after heating about 10 minutes to keep it from scorching... But I think it would do. Lol

    You know, I've been watching your videos on and off for about two years now and I honestly don't understand why you haven't yet bought one of those extra large silicone mats. It's a lot easier to roll pastry/dough on them instead of using silly amounts of flour just to prevent it sticking to the unit. Then, the whole silly thing people do to transfer the pastry to the pie dish is also much easier because you can just lift the whole thing, place it as you wish on the dish and sort of peel off the silicone mat. There's also a lot less cleaning later on because the mat is easy to clean whereas without it you're often left with hardened floury bits on your counter.
    Anyway... Amazon... it only costs a few quid... seriously... it's a no brainer.

    Keef, here's a late comment, but there are vintage recipes floating around suggesting that the original name from WW2 was "Comity Pie." No one seems to recall the term "comity" much, and lord knows there's little of it to be found... anywhere... but you Brits certainly seemed to be giving it a go during the privations of that time and the difficult years to come.
