I made a wild wine with acerola once when I was on a fermentation rampage after reading Sandor Katz' book tasting every day to see when it was done. In one morning it was tasting bright, fresh, tangy and delicious in the morning. By the evening when I went bottling it tasted just like you described there, I couldn't through it away so I bottled it anyway and left in the back of the shelf for 18 months, more or less. Fruit cups, packs of sugar, and apple juice? What prison did this info come from??? Sugar and yeast can be smuggled out of the chow hall, but you're not gonna generally find any fermentable fruits. Your more likely to be using ketchup and artificial maple syrup

I remember my grandmother telling me stories about dealing with prisoners got junk and sick as a dog on the prison hooch they made from whatever fresh fruit, fruit cups, juice, ketchup, sugar, dried fruits etc they could get their hands on while she was a nurse at a state prison in Virginia.

I wonder what kind of information you could get if you analyze it yourself and or set it off to a lab. Like what kind of chemicals popped up in this fermentation style? Did the plastics leach in in any way?

" It taste like nail polish remover " That's the methanol you weren't able to filter out. You just didn't make any kind of hooch, you made *_Squeeze!_* 😆 ( A methonal/ethonal mix )
You also get that nailpolish smell if the brew start oxidation and turning into vinegar. We mostly make apple cider with wild yeast at home. Usually it goes well but there are a batch from time to time that either has methanol or turns vinegar both having that destinct nail polish smell. Pour it in the toilet and do not drink it is my suggestion.
Methanol doesn't have that flavor. The nail polish remover flavor is caused by acetaldehyde. This is a metabolite of ethanol and indicates either an infection that is consuming your product, or significant oxidation.
Methanol is pretty much indistinguishable from ethanol. It definitely doesn't taste or smell like nail polish. Tastes like ethanol but maybe a little bit sweeter.

As former inmate who made fire hooch your kicker is the mashed up fruit it’s usually better to use a kicker that’s already been used before if your making a new kicker let the fruit fermeuntate and keep feeding it sugar like jelly or just straight sugar th e more sugar you add the more potenet it will be when all the sugar burns off just be careful because you never know how much alcohol % 😂😂

I am in the process of making mulberry wine. I bought a bottle of mulberry juice from the grocery store that wasn’t from concentrate. I added bread yeast. Found that it fermented fast. It was super dry but was still fermenting. So I’ve been adding sugar for over a month now and it’s still brewing away. As the bubbles slow down. I add more sugar and it just keeps going. I was hoping to have it ready for Christmas but it’s still fermenting. I tried a balloon with a hole in it. Didn’t work. Balloon filled with bubbly juice. So I’m just keeping the cap on it and I burp it every so often.
make White Lightning next! basically the same technique but you heat cycle the mix and then let it offgas into another plastic bag and the condensation thats left on the bag will be pure alcohol
If you have time and wait a little longer, the yeast and the mush settle at the bottom. You can help by shaking gently from time to time. You'd get a cleaner wine, with almost nothing to filter left
You have to keep it warm. When i was locked up i always made sure to keep the bottle i used to make hooch on my body most of the day and while i slept so the heat from body could help the fermentation process

This is how my grandparents do it(im from an south east asian country) i can say it is safe enough to drink atleast to asian standards.i know im kinda late to comment 4 weeks later lol
this is also how i make my first batch of alcohol beverage really so i say some extra tips will be use glass container and no u dont need a water valve or bubbler just make sure it wont explode by using a big container. Plastic is fine also but really using that makes it a time bomb. u should also generally open the cap slightly everyonce in a while to release the gas. Should be fine to drink after 2 week at maximum.( more note rahhh. for every 1kg of grape u use add 250 to 350 grams of sugar)
Hmmm I always use just oranges, sugar (you can buy boxes of sugar cubes not packets 😂) and water. I did have a gallon jug, but it didn't hold enough I usually made about 5 gallons at a time.
