Nice review. I am enjoying a dram of this now. I am totally surprised how flavorful this is at 41% ABV. I really like. I am glad to find this in central Texas. Cheers@

Starward nova is soooo good!!! On par and better than most 10 or 12 year old scotch I've had......

You have to look at Australian Whisky maturation in terms of Dog years ... 3 years in OZ is essentially 6-8 years anywhere else. Cold weather tends to repress maturation ... If you want to try something different again that will surely surprise, I strongly recommend (Tasmanian) Hellyers Road Original 10. Do not judge this dram from the neck pour ... this is a spirit driven experience that evolves when given time - the result is pretty stunning. Many, including myself, have found this Hellyers difficult at first ... it's worth the journey but you may want to review after getting the bottle level to around 50%.

Another great review guys. Glad to see they're making such interesting stuff in the Southern Hemisphere. One to try the next time I get back down there

I just reviewed tonight a Fannys Bay American Oak whisky from Tasmania, and I really did resist but I did put Eucalyptus oil in there and the whisky was very good. How it got in there I don't know, maybe as you found it is through association with Australian whisky. Fannys Bay might hopefully be showcasing at Dramfest 2022. I think Mathew Cooper or similar from the distillery was at Dramfest 2020 to check it out.
Weirdly I was also reviewing 2 Amrut Portonovas batches tonight - definitely better the Kadhambam. Yes, it is a bit pricy if you don't know what to expect, but I think very solid nevertheless. I tried some new make Starward back in 2017 and was not impressed but I like that something like the Nova provides something different, rather than just aping 'Scotch'.

Eucalyptus notes find their way into Australian Cabernet Sauvignon fairly commonly, so it wouldn't be too much of a stretch to find them in the whisky (particularly as they share barrels).

We've never tasted it, but it's been in production a good long time so it must be fairly well regarded. It's one we want to try and catch up with this year.

It is lovely stuff, my favourite whiskey atm. Really nice butterscotch notes
