I have grown it in Maine for about 20 years. I eat the young leaves in salads, I wash the roots and scrape them, and put them through a juicer which separates the juice from the pulp, (so I dont have to grind or grate it) and then mix them back together and add vinegar. I have not had luck with it in warmer climates.

That’s cool, because I like horseradish with oysters and you eat them in the months with ‘R’ in it
I've started eating it all year. In summer a horseradish/mayo spread is common on my cold cut sandwiches.
