  • Finally a dip in the wind. Got the kayak out for a quick run to make sure it still floated and test some engine repairs. Ended up catching a 28" Cero Mackeral, so decided to make a cooking video. Cero Mackeral sashimi.

    I am not a big fan of eating fish mostly only in Ceviche but I do enjoy fishing and watching you fish really gets me jealous to be able to fish in such a place as you do. Keep up the videos I love watching them when you fish by the mangroves

    Glad I stumbled upon your channel. Really neat to see a Cero Mackeral. We don't catch them up here in North Florida, just spanish and kings. What a beautiful fish and those fillets were some kind of pretty. Looks like I have a lot of new videos to check out.

      Yea, they are primarily way down south. It's too bad, they are an amazing tasting fish. We only get them down here for a short period of time. I whacked hem today. Video hopefully out in the next day or two.

      Thanks Jose. Nah, I like doing it because it is fun and a challenge. The Keys are a tough place to fish, but what people see on tv makes it look easy. I feel bad when people come down and have a hard time catching. I get enough thanks to make it worth it.

      It's simple, just go out and get a Cero Mackerel. Oh, I guess not so simple. McDonald's filet o fish maybe. Almost the same.
      I did a ceviche with some of the other pieces and that was even better. It's a very light lean fish so its one of those that is good no matter how you cook them.

    Thanks for sharing your fishing videos and straight forward approach to fishing and food prep. Not fancy, just practical. If you have not seen Virtuovice videos, I think you might enjoy. He is a Japanese outdoorsman, hunter, fisherman, knife enthusiast on the north island of Japan. A general practice doctor by trade, excellent English. Very entertaining.

    Great video! Beautiful looking fish and fillets. Question though, I heard that before you eat raw fish, that you should flash freeze it real quick first to kill off potentially harmful bacteria, but it doesn't seem like in any of your videos you do this. So since your alive and kicking, I'm guessing that is only the case if your buying fish and haven't freshly caught it yourself? Thanks!

    Right on dude, I thought I was the only one eating ceros sashimi style haha. Ceros make a pretty damn good ceviche too. You said you're going shark fishing, but those mackerel bellies make a mean strip bait. I really enjoy these videos.

      Yea, they are pretty popular down here with the people in the know. That white meat makes it easy to tell it is going to taste good. Nice solid filets. No trolling in these winds. Shark fishing video will be out tomorrow.

    I can see this is 6 years old. But.... a $4 black rubber door mat on top of that cooler makes fileting even easier. Just as easy to clean.....

    Great stuff Steve. As usual, your videos are entertaining and informative. BTW, if you will reduce the angle on your knife blade and apply a bit of downward pressure, almost flexing the blade against the skin you will greatly reduce your instances of cutting through the skin. The fresh sushi looks amazing.

      Thx. That mackeral skin is pretty thin. Probably better with a filet knife. Definitely a light flavor to it that most people would enjoy. Definitely no fishy taste. It was great in a ceviche as well.

      Nah, I passed on the guiding the last time I lived here. Could have taken over a well established guide and commercial operation. This run was just for the sake of putting the kayak through the paces down here. Maggots make good bait. Just think of them as portable. It's actually a pretty big deal now. They have had to put down over a 100 deer out of a population hovering around 1000. They have also found them on other animals and pets as well. Makes me itchy thinking about it.

    Nice video. I love Cero macks prepared as Escabeche. Have you hooked a big Wahoo out there in the reef while trolling from your kayak yet? Wahoos are insane. Do you have a species you have caught in a Yak list yet?

      I think it was last month I picked up a Wahoo in around 250'. The Cero is a great fish all the way around.

    Hi, I've been enjoying your videos a lot. I'm a fresh water fisherman so don't know much about fishing in salt water but have a question. I noticed that when rigging your hooks you throw the scrap line in the water. Will the salt water break that down over time or is there a concern about it being in the water and not breaking down?       My kayak is the Hobie Adventure Island which is a full on sailing kayak. So, everything came with the kayak. You can check out Hobies website.

    Do you ever freeze your fish until you are sure there are no parasites in the meat? How do you know of the fish you catch is safe to eat raw? Love the videos thanks so much for the uploads!

    That's a nice catch buddy! Cero is my favorite of all Mackerel and definitely in my top 10 of all fish! When I make a video of my favorite recipe Mackerel in Coconut Milk, I'll message it to you so you can see another presentation method :-)
    Sidenote, I have no idea why anyone would thumbsdown the vid? Smudged lenses perhaps? But that happens to all of us who brave the elements to make videos! I mean come on now...

      Definitely. The Macks should be moving in with the cooler weather and the Pilchards. I'm trying to expand my cooking base so I'll give anything a shot.     great channel. hey I'm thinking about purchasing a penn spinfisher v. I was looking at the 8500 live liner vs the 9500 or 10500. my main uses would be on a kayak and pier. would you know any reasons as why I should go bigger than 8500 ll? or stick with the 8500 live liner?

      unless your going for gaint sharks or rays i wouldnt get one that big.

      Like ghl.... said, unless you are targeting really big Sharks off the pier, you wont need that much line. You especially don't need it from your yak as you can follow the fish around. The extra weight and all the extra cost for spooling it with line wouldn't be worth it. Hope that helps. I do know some of the Miami kayak guys like the bigger spinners because of the extra drag they can put on for vertical jigging, but I don't think it is that necessary. Plus, that weight.

    how often do you catch ceros vs spanish? do they travel in schools together?

      They start showing up more often in the winter. Pretty much the same with all the Mackerels. We catch them a lot in the Gulf and backcountry as well as on the reef. I don't know about schools, but they do show up together but I think that is due to the fact that there is more bait moving in shore.

      Good idea. I never thought about learning that. I speak basic Spanish but have never really learned local fishes name in Spanish. I think the local Cubans can help with that. I'll look into it.

      My light tackle stuff is Penn Conflict reels and Shimano Teramar rods. I have a few other mis-matched stuff as well. I'm not a big rod and reel snob. If it works, I am happy.

      Yea, they have those canvas pieces you can add. Great for taking other people out on. I don't have a need to carry more stuff, plus, I like the ability to paddle as well.

    probably a dumb question but what types of fish are safe to eat raw? does it matter if it's fresh or salt water?

      Fresh water will tend to carry more types of parasites than Saltwater. Flash freezing will take care of most of them. There is always a risk just like everything. The colder the water that they are living in also is better. Usually, the white somewhat solid filets are best. Oily fish tend to be too fishy. For freshwater, I hear the Crappies can be good.

      Yea, that is my go to cut bait for snappers, but it is not easy for people to catch unless they have a boat or are able to get out to the reef with a kayak. Pinfish is a lot more useful for the general population, so that is what I try to use.

      I think I will do that this week as we are on another crazy wind cycle. I just didn't want to pollute the youtube with another cast net how-to, but I truly base my fishing around the cast net, so probably use it more than most.

      Mangrove Snapper is my choice. I'm not a big food connosuire, so they are great all across the board. Plus, they are abundant so no drag on the eco-system. They work with any type of recipe. From Sashimi, ceviche, to all sorts of cooked.

      I just use the Gopro studio. My videos are pretty basic so don't need many extra features. Works fine for me.

    I also enjoy using the mirage drive well, to bleed fish. That and numerous other things. Smudgy lens makes my eyes go out of focus :(

      It's perfect for bleeding out Blackfins. Their heads wedge right in the slot. Yea, that bummed me out when I saw the footage. Haven't had that much problem before, but this whole video was plagued with them.

      I like eating junk food, so fish make up a small portion of my diet. I am primarily a catch and release fisherman so really only keep them on occasion. Don't worry that much about Mercury. Don't really worry too much about food as everything is bad for you, it just depends on how far you want to dig into it.

      It breaks down the cells walls by extracting the saltwater from the filets. Not a big deal if you are cooking right away. Just don't want to soak them for any time. Just think of it as the same thing that happens if you put a steak in water. The blood bleeds out and it gets all white and starts to break down. Same thing with saltwater fish.

      Not sure. Kmart clearance old school sweats. I like to makes sure they have elastic on the legs so that they keep the sand out of my wading boots. I got them for $10.

      Not so much an issue with the ones I am going to be using right away, but fresh water will start breaking down the meat if left to soak. It has something to do with the saltwater that is held in the cells of the saltwater fish and them being extracted as the cells are inflated with the fresh water. It's kind of like putting a steak in water. It starts turning gelatinous. So, I try to filet as clean as possible, throw them in a bag and then into the freezer. When I am going to prepare, give them a good wash down and cook them up. If you freeze right away, it wouldn't make much of a difference either.

    hey, enjoyed you videos a lot, you got a nice channel going here. Consider getting yourself a set of traditional Japanese knifes. A Deba and a Yanagi, doesn't have to be those high end expensive ones, just the lower end stainless one to start with. You should also consider filleting your fish the Japanese way. It's more work but worth it. Check out the channel of Nara hirokazu, he will show you the proper way to butcher a fish. It's gonna take a lot of practice, but you will be able to enjoy your catch better for sure.

      Jon Mitchell they are OK to use for general cooking, just don't drop them. If you are serious about making the best out of your catch, especially if you like to enjoy them raw, you need specialized knifves.

      Jon Mitchell look into Ike jime as well, it's the proper way to process the fish after you catch it, there's more than just bleeding the fish.

      Cero Mackeral is different than Spanish or Kings. It is not oily nor that grayish color. They have very white meat that is very light in flavor. Mostly only find in the Keys to the Bahamas.
