For more clarity, Aventurine doing that much damage is due to E1S1 Topaz and Ruan Mei, so don't think he alone or in other team comps, would he be doing that much damage.

You can swap out the 2p knight set with 2p grand duke (follow-up) set but only if you can hit 4000 def without the knight set. 2p grand duke and 2p dead waters would be his best set for doing damage but the sub-stats on your relics are more important. Use whichever 2p+2p combo between these three sets with the best sub-stats. Inert salsotto is his best planar set for damage so you are good there.
E1 is just 20% extra cdmg for the party. Without E1 He can still cook. My CDMG on him was 216 before E1, so I still did a lot of dmg with him. Most damage really depends on your build.

Huh, so low shields don't matter as you can spam his follow-up to increase the shield, as long as you aren't bombarded
