It may sound weird, but I chop dill pickles into chunks and add them in the soup. I like pickles on my burger so I couldn’t see why I wouldn’t like them in the soup.

I love my cheeseburger potato soup. It’s delicious and once it I love my soup with some crusty bread smothered in butter. I could eat this a few days a week during cold weather. I would brown the meat with onions first in the Instant Pot (dab the grease out with paper towels & tongs if greasy). Add the veggies and stock and pressure cook 10 minutes. Meanwhile make your roux in a small skillet or mix cool water & cornstarch and thicken the soup once it has cooked. Add the cheese and melt. This should be a lot easier and not mess up so many dishes! The idea is great--Cheeseburger Soup will be delicious when the weather turns cool.
have made cheese burger soup many times , its always a great soup!!! however i do not put celery in mine , but i do add pickles and lil of the brine it brings it delish flavor!!! ty for sharing this recipe with us !!! and cookbook , oh yes plz!!!
