I Cooked the CRAZIEST Parts of a Cow and Duck (Lengua & Rocky Mountain Oysters)

- Beef and duck are two of my favorite proteins to cook but needless to say, I don’t have very much experience with balls and tongue. But… I wouldn’t be the meat guy if I didn’t give them my best shot, and that’s what we did in this video.
Beef tongue (also known as beef lengua) is probably the most common of the bunch and is actually really delicious. Duck tongue is also something I’ve eaten many times while living in China… but the rest was uncharted territory. Let me know what you want to see me cook next!

Once I went to a Mexican restaurant and they had cow tongue on the menu. I ordered it, thinking it would be a few slices but I was served a whole cow tongue that was in green sauce. Honestly I wasn't grossed out or anything and it became one of my favorite cuts of beef I've ever had.

Woah, you cook your tongue super different from how it's done in northern Mexico/Southern TX. The texture is completely different from how you've got yours - less like brisket & more like pulled pork
Being from the RGV myself, I can attest to how true this is. Barbacoa is delicious though, I make mine a little different though, I smoke it instead of braised but it still shreds and makes bomb ass taquitos.

Hi Max!!! I'd like to advise you a tasty recipe: grilled stuffed squids. Squids are filled with a mince of garlic, olive oil and parsley, a tablespoon of lemon juice and bread crumbs. This is an Italian recipe. And then you grill the squids, naturally low and slow 😂. Do you like Italian food ?

Great video Max! So I made the Lengua as you recommended with a couple changes: used a pepper heavy BBQ rub (which in hindsight I should have used less pepper) and ate the lengua right after smoking, no frying needed. The tongue has three distinct sections that I just found out gave me totally different experiences: the tip which was dry but crispy, the bottom muscle that holds the tongue to the palate which was juicy and funky and the core tongue muscle which you show in your video as juicy (and it came out looking just as you showed). A 14/10 in my book and thanks so much for the recipe and guide!

When I visited Shezuan China I ate duck and rabbit heads, duck intestines, pig intestines and beef scalp. I probably ate some other weird things without knowing. Overall, best food I've ever had.

Now granted its not a weird video i just wanted to make a balls counter because i have no friends but I just want to give props to this guy for teaching me so much. Ever since I’ve first watched this channel ive learned so much about cooking and I thought I should thank this guy.

when u first cut into the balls, u couldve jus easily pulled of the skin, thats what we do for the sheep ones in iran, simply marinate with slt paper lemon and onion, maybe some garlic & ginger paster, and straight BBQ skewers.

We also cook beef tongue alot we pressure cook an 800g of beef tongue in about 30 to 45 mins then peel and slice to 1cm slices
Saute some mushrooms and sausages. Add the beef stock and the tongue slices then simmer until about half of the liquid.
Add cream roughly 250-500ml until thicccc then season to taste
Best served with rice
Our family's filipino lengua with out corn, quail eggs and other crap they put

Max, where do you get your duck tongues from? I live on the West Coast and we have many Asian markets around but I've never seen duck tongues offered.
I've had beef tongue before seeing this video and cooked it differently, and ended up with a pulled pork style as well. Your recipe sounds fantastic though!
As to the testicles of duck and beef, I haven't had the chance to try them. I actually would do it willingly.

Here in costa rica beef tongue is very common usually though we usually make more of a stew with it boiling the tongue rather than searing it like that
