My personal experience suggest that leavening whole wheat bread becomes easier when we add egg to the dough mix. Also add full cream milk instead of water to leaven the bread. I also add one mashed potato to the dough.
First thanks a loads for your recipes. I've tried this thrice and got it hard all the time. it was well risen every time, once it was risen too much that it developed sourness, still hard. why? will baking soda help? what else to be done to get it soft like yours?
If your oven has max 200C like mine, then preheat at Max temp, cover and bake at 25-30 min at 180C, then open add some oil/butter/milk/egg wash on top and open and bake at 200 for 8-10 min

The dough is well risen. It shrinks later while baking. Do you mean to stick to 2-3 hours, temperature is 30 degrees here
