HOW TO MAKE MODELING CHOCOLATE | Lemon Cupcakes

  • Modeling chocolate is made of two ingredients: chocolate and corn syrup. We'll be using compound chocolate today, and it's sometimes called modeling clay instead. This is an awesome replacement for fondant, if you don't like the taste (like me!) or are just looking for a great chocolate-based decorations for all your desserts.
    I made some toppers for my lemon cupcakes, but you can mold little flowers, figures, or any other things for your treats.
    Remember a 5 to 1 ratio of compound chocolate to corn syrup. For example, you would melt 10 ounces of chocolate and add 2 ounces (by weight) of corn syrup. This works for all compound chocolates, including the candy melt colors.
    For real chocolate, the ratio is a little different and I will have those up soon.

    Good morning Adriana! I've been seeing the modeling chocolate recipes for a few years now and how easy it is to make it but never did it...imagine that! LOL A couple of months ago, I even bought two tubs of it from Amazon. I totally agree that fondant isn't tasty at all so why not use chocolate!! I'd thought about gum paste and marzipan as well. Even if modeling chocolate doesn't really harden up like fondant, it's a perfect alternative that tastes good. Looking forward to seeing what fun ideas you come up with.       Hi Kelly :) Yeah I saw it in Michael's and I almost bought it, but then I was like, I'm going to make it... anyways I think it would taste better homemade. Yeah so I'm just starting on this journey of these little decorations and marzipan and gum paste sound genius! Do you make that from scratch or buy it?
      Lots of ideas going around in my mom brain so hopefully I come up with some more creative stuff soon. And you have a great weekend too 💕❤️💗

      I've only bought them, guess I've been a bit lazy! LOL ; ) Gum paste is only powdered sugar, egg whites, salt, any extract, Tylose powder and a bit of shortening...it really doesn't take long to make either. Marzipan is just as easy, almond flour, powdered sugar, salt, egg whites and almond extract. One of my BFF's, Deona use to make them, that's as close as I've came to making it from scratch...by watching her. LOL Can't wait to find out whatcha got running around in your mom brain!     Question ➡️ Do the cake decoration brushes have different materials than the regular art paint brushes for safety ? I wonder that if I have a brand new regular paint brush in hand and I can use it. Thank you 🙂

      You know, I wondered the same exact thing so I always buy Wilton brushes at Michael's. They do say food safe - but I haven't done the research to figure out if the synthetic art brushes are ok to use. Anyway you don't have to worry about finding them, your new Wilton brushes will get to you on Sunday 🥰

    after putting powdered sugar, it will not be oily and sweaty anymore? and is this okay for humid weather? how long do you store it? lol i have so many questions.
