Tip: If it's freezing outside, put your trays in your car. Bug & dog safe, they freeze then to freeze drier. I use my car as a freezer in below freezing weather and as a fridge if above freezing but not more than 45° overnight if a big pot of soup needs kept cold but not frozen.
Former chef here. Thanks a lot for this video! Just one tip to add: when you are draining the cooked spaghetti if you cool it off with cold water it will not stick together so you can avoid adding oil.
Pro pasta tip: Next time you do this, just rinse your pasta under COLD water, until it's all separate and cool. That way, there's no sticking, and you can either keep the pasta on it's own, or dress it with sauce, like you did here.
For someone who doesn't know how to make the dry spaghetti noodles, they might be misled by this. It looks like you left half of the noodles in the air and not submerged in water to cook. Maybe I'm wrong?

With stuff like this, I do usually get a before and after weight, just so I know how much hot water, by weight, to add.

ummm thats wax paper which is a no no
I was just going to say that. She said she was using parchment paper, but it's very obviously wax paper. The wax would melt and it would be gross.
