I like example 1. It demonstrates human body act as a gate charging resistor and gate discharaging resistor. 9V battery probably destroys a led rated for max 3.6V. I'd use two leds + resistor in series.

Não, o IRFZ é um Mosfet, já o BC 547 é um transistor, mas dependendo do circuito você pode usar o IRF 630, é um Mosfet mais fraco, mais serve também.

at the end,the buzzer not works because you use 9v battery and the mosfet killed,and IRFZ44N has a input limit of 5v maximum.
the first video why it lights up?because the light draws very little current to kill the mosfet,or maybe ur buzzers polarity is wrong.
