I can’t imagine your bike will ever be the same after this experience.
You can disassemble, grease and reassemble the wheelhubs and the the bearing in the stem. The chain won't be a problem if cleaned and properly greased.
The only part that might cause trouble is the bottom bracket.

No, I do this with 2 in front and 3/4 in the back of my 21 speed mtb.
I’ve done some rocky river crossings and I’d say don’t downshift too far you would not have enough momentum - just far enough you can keep a good cadence. I’m sure clips would help a lot - but I just use school flats. I could imagine some funny scenarios not being able to unclip 😂

I tried this for many times like everytime it floods here in my city there is always ppl who rode their bike but my fricking experience was when i was riding my bike in a flooded part i fricking fall on the canal system sadly the bike was not in good condition when i got home when i told my parents my experience they laugh and so now everytime our city gets flooded we a family of mtb riders rode our bike for fun
