这是我家所喜欢的卤鸡配方,每次煮卤鸡,必吃两碗饭。其实要把卤鸡卤入味又漂亮,说难不难,说简单又不简单。

材料:
1只鸡
8g八角
5g花椒
10g甘草
10g桂皮
1粒草果
11片老姜
200ml老抽(我用李锦记特级老抽)
80ml生抽
60ml玫瑰露酒
11g盐
120g冰糖
5g味精
1小把青葱
braised whole chicken:
1 chicken
8g star anise
5g peppercorns
10g licorice ( gan cao)
10g cinnamon
1 grass fruit (cao guo)
11 slices of ginger
200ml dark soy sauce (I use Lee Kum Kee extra dark soy sauce)
80ml light soy sauce
60ml rose wine
11g salt
120g rock sugar
5g MSG
1 bunch of spring onion
