Mine is always bubbeling out from the jar when i spill the coffee in it and shake gently! after with a spoon. Annoying but the taste is cool, i love it with a lots of lime juice and ice!
it depends on the coffee, coffee with lots of body and texture will explode with foam, try it with a single origin light roast espresso, it will keep the bubbling to a minimum. It's like how soda will fizz up when you add salt or sugar, the darker and oily the beans are, the more nucleation sites it'll create with the tonic.
Tried it with stovetop "espresso" and blood orange tonic water. Not bad, but the orange was a bit overpowering; I think it needs to be standard tonic, or at least something lighter
Tonic is pretty different than Sprite. Tonic is bitter thanks to quinine. Sprite is just lemonade with too much sugar. Not that I don't like Sprite, but it's pretty good description of it. I think You can try Sprite but it's quite sweet and it gives You different taste.
It's pretty nice recipe but I don't think regular John Doe know how to do doppio or even use good coffee machines with good coffee seeds. Tbh, even I don't know how to find good coffee beans, cause when I am at coffee section in mall or market, I completely don't know what's the difference between those coffees. I just know there is arabica and robusta. And I have no idea what's the difference between those two either. Also, tonic shouldn't have citrusy flavor. I mean, the main taste of Tonic i bitter, thanks to quinine. For me this doens't sound like anything odd tbh. I just google "tonic and coffee" because I wanted to check if I'm not to weird thinking of it :D And I found this video. For me it's sth, that sound pretty cool. I can't imagine the taste, but tbh, most of things sound odd only when they are biased. Come one, people are eating brains, hearts or even stomachs and they find coffee with tonic weird? Hehehe :) Also, I have a question. If I do just regular coffee from not pressure coffee machine, whil it be good? And it has to be espresso with high coffe:water ratio, right? It needs to be strong coffee, not diluted in water? And if it's not from the beans, just already minced, will it be good too? I understand it can not be as good as the best coffee prepared in best coffee machine, but within what I am capable for, will it be any good?

Put the tonic in the glass.. Put the glass under the machine on scale... And do around 40 Gr of espresso

How did your tonic water and espresso shot not mix? My mixes and I am unable to get this layer difference

That's how I do it and it works great, I use less tonic and no ice at all to make it a short drink, however. Enjoy!
