He knows the measurement and adds them pretty well, but the way he moves the wok to prevent overcooking is too messy and he ends up throwing chunks of food outside of it. He's fast, granted, but lacking neatness.

That food is still hygienic compared to luxury restaurants. I have worked in a 5 star hotel and i know what we used to cook. Seriously i didn't even wanna taste any of the food that came from the fridge. But this one here is all fresh. And lastly, if the place looks dirty doesn't mean its gonna harm you, its street food, if you wanna eat, eat. If you don't you can pass.

Yeah.. From a presentation standpoint, things don't look great in terms of cleanliness, but at least it's out front where you can see it. Do you ever wonder what the kitchens look like at your favourite restaurants and fast food joints? It's not an excuse, but at least you can see what's going on here. If you're put off by it, you don't eat there. People don't seem to be, and you also have to bear in mind that some people have to make do with what they have in terms of their tools of the trade. The dish looks great, and I would totally eat it.
Yes you are right. I travelled more than 35 cities in India and abroad, most of the restaurants have dirty setup in kitchen because of the high volume in orders and long working hours. I believe in Eat what you See in the making.
