After the chicken was done they removed from the wok. Next they stir fried cabbage and onions. When the cabbage and onions were close to cooked they added the sauce the chicken back, then the eggs. I just made this yesterday for dinner.
Finally I was able to convince my husband to cook following your recipe since he loves katsu donburi. He tried it this weekend and it turned out great. Thanks Aaron for being a good role model for husbands✌🏼😄👍🏼

I just made this for lunch for my husband and I. We give it a 5 stars and super easy. Unfortunately I wasn’t able to cook the fried chicken on top of the egg/sauce mixture because the pot I used to make the egg/sauce topping was too small for the humongous Costco chicken breast I used. 😅. But still…. Delicious!

Hi, Indonesian here. Dashi should be halal as is, as for mirin kikkoman sells a halal variant here. sometimes we use rice vinegar with sugar/honey to sub if we don't have mirin on hand.

The sauce itself is full of umami so it's still gonna be good without it so don't worry about it! 😎
If you want, you can try daikon or carrot or cabbage. I like your idea of mushrooms - I will try it!
try cabbage, it will be similar feeling and look ^^ and shiitake mushroom for sure will be good

You can use chicken buillon powder, or however you spell it. It wont have the same bonito floral notes but is a reasonable substitute.
