We recently dehydrated several heads of cabbage for future use in soups, egg roll bowls, sauteed mixes, fried rice, ferments, etc. The amount of space difference between regular full heads and dried is ENORMOUS and conveniently flexible!
I made zucchini chips yesterday. From more than half a case, it dehydrated down to 6 pints. The rest I shredded and froze for zucchini bread, one of Mike’s favorites. 5 heads of celery dehydrated into 2 pints- 1 pint of the stalks, 1 pint of the greens ( which I will eventually powder for seasoning. That 3 color vinegar you’re working is absolutely beautiful! I dry a lot of fruit but I do water bath a lot, again because Mike prefers it. My dehydrator is breaking down, it randomly changes temperature and time, so I bought 2 Cosori dehydrators. Yesterday all 3 were full and running. I’m like you, I love the fact that dried takes up less space, but I still had to clear out the 2nd closet in our spare bedroom for extra storage with this years produce coming in. I'm not a ferment fan - vinegars, shrubs, sauerkraut - that's about it. But I love dehydrating! For one thing, much of the harvest comes in July & August when it's miserably hot & humid - I can easily move the dehydrator outside, but I don't have a good canning setup. Even later in the fall when it's not quite so hot, dehydrating inside doesn't increase the humidity like canning does. The two things I can are pickled beets and ketchup, and both can be done once the heating season has begun, when both the heat and the humidity generated are welcome.
As I sit here sipping my home-roasted coffee and getting my weekday Heidi fix, I'm watching the snow fall. 5 inches at least so far. Hopefully it will melt quickly and I won't have to shovel too much. Thanks for the tip on still being able to ferment frozen foods by adding something else. When you said that I was like...well duh! I have a huge bag of frozen blueberries and would like to use them up. Hey...now that I type that, I could dehydrate them also. Thank you for making my brain work again. hahaha God is good ALL the time! God bless!!

Just the video I needed, thank you, Heidi. I think dehydrating is what I need to focus on given I have so little room for storage. I will have to look in to ways to get free power to cut the energy costs. Perhaps invest in a power station and portable solar panels...
I like having the dried stuff. It's just me and I could go through all the fermented food fast enough but if I'm hungry for sauerkraut I can make just a small batch out of the dried veggies and not waste anything. thanks for that great tip Heidi 😊
Just a couple days ago I heard a 'person' I didn't know, on a 'media platform'; trying to be very vague hear, so no one can figure out who it was; say something similar to this. They said something my mama would have had a fit about; come to think of it, I almost am. They were practically hysterically about what they could feed their family if, as an example, the meals they ordered through the mail stop being delivered to their house. Fast food places were probably going to be closed too and they kept NOTHING to cook at home and finished with I can't cook soup! What can I do?!!!? This person was dead serious and at the what if my food isn't delivered part was WHINING and sniffling. I tried to have a compassionate heart, really I did. It breaks my heart how many people are going to be in that place 😢

I don't like canned zucchini, so it has to be frozen or baked into something and frozen, or dehydrated. This was my first year dehydrating. I took frozen mixed veggies and dehydrated them, and I use them to make my own dry soup mixes, or cook with them. So handy. The apple slices are yummy! I like having my tomatoes canned. I don't have the kind of room I would like for ferments, or I would do some more.

Yes i cant get folks to eat much fermented veggies, cole slaw and onions are about all i can get into them.. sometimes they will drink homemade sodas.... But the chickens love lightly fermented banana peels :) I cut them long and skinny so they look like worms to them :) I use the liquid from the banana peels for ferment starter, because we pretty much always have bananas. I have difficulty making vinegars though because the kahm yeast is very happy here and takes over everything..

I like to dehydrate instead,and yes I like to can,and I just made papaya vinger,I made a salad dressing using that vinegar,it came out great. My body does not like Fermenting foods. Great video

Heidi, thinking of trying to make vinegar from red bud tree blossoms. I was wondeting if you had ever used some weak kombucha as a boost for vinegar or should i just use some sugar and well water?

I dehydrated eggs for first time but on 115 cause my new dehydrayter was so hot I did not want to cook them,but turned down to 95 for overnite do you think they are safe,or should I toss

Don't forget. I made vinegar out of blades of grass once just to see if I could. Worked great 😊

I only rinse herbs if they need it, which my nasturtium flowers never do because of where they grow so they just go directly in the dehydrator

I stopped making kombucha many years ago but as long as it is active and very bubbly (not weak), it should work

is there any way to store fermented eggs long term?
They will store in the fridge for quite awhile but I personally would not leave them for more than a couple of weeks
