How to Freeze Tomatoes

  • Freezing tomatoes is very easy. Because freezing fractures the tomato flesh they are best used in soups, salsa, and other cooked dishes. I completely cook my tomatoes then cool the pot in a sink of tap water. Then just label and bag them.

    I have heard Phyllis that if one scores the top of the tomato to be skinned the peel comes off easier. Score a small X just cutting through the skin on the stem side of the tomato.

    I've always used the whole tomato, except for the skin, when making a chunky marinara sauce. We can buy the best canned tomatoes in the world, but they don't hold a candle to a fresh tomato sauce. So good! My mother used to can the completed tomato sauce. I've never duplicated how good that was! She also canned eggplant in which she included that sauce and fresh basil. I wish I knew her method for this. She also canned the eggplant with vinegar and Italian herbs.

    Great info, Amazon had fruit flow when. I checked today. Have heard grape seed extract good for heart health for years,but never heard about tomato gel. I don't take seeds out when I can tomatoes anymore,too much work and I never minded having them in sauce. I was most interested in the memory health tomato gel is said to promote. As a retiree keeping sharp is a concern as well as heart health. I think I'm willing to give this a try, We need to keep on top of our health. I

    I never peel my frozen tomatoes. Just wash, cut out any bad parts and then bag and freeze. I do not cook them first. Then when you have time, you can cook them, skins and all and run them through the food mill or food processor or even the Kitchen Aid juicer. You can make tomato juice or salsa or whatever with them. We had so many tomatoes last summer that we ran out of time and energy! My daughter ended up putting the ones we could not can in her freezer. In years past, when I was canning a lot and had a lot of tomatoes, they went in the freezer then in the middle of winter I thawed them on my wood burning stove, cooked them up and made them into juice, no peeling or anything, just take out the bad parts before you freeze them. I guess if you wanted your tomatoes for soups and not juice then you would have to peel and core. Do you do any canning Phyllis? I have had many years of doing a lot of canning.       I canned a lot when I was younger, now I use my freezer and make a lot of convenience meals since it's just the two of us now.

    I put my tomatoes and my peache in an old pillow case when I scald them. I think it is quicker and easier to do. I look for easy and things that save me time.

    This is a job! .I haven't done in about last 8 years...
    But can't beat doing it ...
    boy I've been burnt .... lol not funny but I'm sure anyone's that done the tomatoes like this has been!!

    I love your videos. I have a big upright freezer and I am learning all kinds of food to prep and freeze I never thought of freezing. I use a lot of onions and celery as well and I hate it when I find wilted celery in the fridge and I am getting ready to make a soup or stew.I put onions in everything but toothpaste. LOL.

    One more thing! I sure do enjoy all your videos on freezing and canning as well as other methods of preserving foods. Have you ever heard of Leather Britches? I you don't know just ask me and I'll tell you. It has to to do with food preservation.

      I used to seed my tomatoes before eating, too. Then I read somewhere that the pulp (not the seeds) has all the flavor in a tomato! No idea about the health benefits.

    love the info, will check out that seed supplier for sure. If I had that many tomatoes at once I would can them to juice, we use a ton of it for sauces and soups. My freezer is so full, I need a second one.

    If you will eat something like banana, baked sweet potato or other food when you take aspirin, it will prevent causing ulcers. It prevents the aspirin from laying on your stomach lining and burning the tissues there. I know this is true because I’ve been taking aspirin for years and it works for me. Others have said doing this has prevented the burning in their stomach as well, after I’ve told them about this tip. Sometimes the simplest little things makes a world of difference!

    Would quality remains same if i cut tomatoes in quarter size and then freezing for about few hours so that they become hard and then stiribg them in freezer bag.
    Will it still stay for six months or more without affecting tomato nutrition

    Genesis 1:12 did not say don`t eat the seeds. The jelly surrounding the seeds in tomatoes are there to prevent premature sprouting. A very good way to remove the jelly is to get 6 to 12 nicely formed tomatoes from 6 to twelve different plants and squeeze them into a container and let them ferment. That will remove the jelly. The good seed will sink and the bad seed will float. Another way, is to just throw rotted ripe tomatoes in your compost heap and wait till spring for them to sprout. But, thank you for your research.

    hey phillis,you ought to buy your tomatoes,at the farmers market and just dont grow a garden they got green beans,anything you want,but bushels of them and can them yum so good.thanks 😉😎🤯

    Frozen tomatoes are a bit watery and that is why I think it is better to put them in glass jars, but I know you already know this.. Freezing is so much easier.

    I freeze mine whole. When I freeze them the skin splits. So it comes off.

      Never saw any in person but have seen pictures. I grew some purple tomatoes a few years back, got the seeds from "Tomato Bob" on the internet.
