I'm not fluent in Japanese yet (my level is between N3 and N2 somewhere) but since 上手 is a ナ形容詞 it should be 「上手だし」。 And counters/quantifiers always come after the noun! But if you really want to place it before the noun (then it kinda sounds like you're stressing that she's making a lot of videos, I guess?) you can say 「たくさんの動画も作ってる」。 And then to make it sound even more natural you can add something like 「そりゃ」before 「人気なわけだ」! (^_^) (edit bc of spelling mistakes)
as a French native speaker, your channel is one more reason that makes me so happy that I was focused in English class lol and by the way I understand you sooo easily compared to American or British people !! 日本語を教えてくれてありがとうございます!

しか〜ない means “only” just like だけdoes. So it should only take an hour but it took 3 hours! もemphasizes (she literally explains it in the video) Note 助かる means she saved your life. すごく手伝ってくれた。sounds like she helped you.
