    Cut on each side of the lateral line and leave the bloodline on the carcass

    Should have called this "How NOT to Filet a Bluefin Tuna" - totally wrong technique, with an absolute HACKJOB with that POS knife. I'm a Dexter filet knife fan (I have 3 of them - prefer the Sofgrip), but this thing is orange junk. Bad product placement vid for a bad product - probably the only dude they could find who would put his name on it.
    If you actually want to know how to filet a tuna, there are plenty of Japanese sushi chef vids here on YT that will show you how to do it properly. And surprise, surprise - none of them are using this orange junk!
