i've said it on another vid recently, but i LOVE seeing someone like david chang cooking the way i cook every day. a lot of people realize that cooking is hard *physical* work, but david also acknowldegs that it's *mentally* exhausting af to decide what meals to eat every day and go get all the ingredients blah blah blah. that is so fun when i have the time and energy, but i have to eat 3 meals a day, so it's not a realistic or affordable approach overall. a lot of pro chefs (or anyone who fancies themselves one on sm) focus on doing things CORRECTLY / only ONE WAY, often with the most expensive ingredients or tools at their disposal. imo it can make people feel like cooking something delicious is out of reach. ofc i'm sure he'd love if i had the momo salts and noodles, lol, but i can use this framework w what noodles and seasonings i do have on hand with little loss of quality.
the lack of branding anywhere on the pan is suspicious. every type of pan imprints the brand on one or both handles, inside center, and center bottom; bc there is absolutely nothing in any of these spots or any others, my guess is what we see here is a lab test unit for a product david is developing for release. he said in a vid a year ago that he HATES woks like this, so him suddenly using one in every vid also supports this theory (bc he'd probably only want to use one whose issues he's "fixed" lmao). the handle is very unique too - molded to the hand rather than standard round/rectangular.
after microwaving bullshit to sell pots now we are down to "Buy my 20$ salt put it on god damn trader joes frozen orange chicken and call it a day" David chang everyone. Excited for the upcoming momofuku cream of mushroom soup casserole.
these can be made super easily in your own kitchen, why would you need him to spend a bunch of money for a very niche group of people (making things that are allergin free is extremely difficult and expensive commercially)? Its just salt kept with powders that you can buy pretty easily.
If I didn’t use them everyday I’d be inclined to agree but unfortunately for my wallet, they are fucking magic pixie spices that are absolutely as good as advertised 😂
They have arrived! A huge box full of delicious treats! I like spicy things, but I have found that the spice is a smidgen hot for me, but the flavours are fantastic. The noodles are so good! I’ve used the noodles (without the spicy flavour packs) to make ramen. Good good good! I will order them again.
"For the amount of deliciousness and the amount of work I put in there, you can't beat this" ---- The key is high-quality meat. You can't get that with subpar meat. Shout-out to those chicken farmers.
me too! i immediately thought of home fries - using them in lieu of rice in a "fried rice" type dish lol. i bet it would be good, esp with the flavors of korean braised potatoes.
that jar probably is only for cooked meats or just gets tossed after the shoot. Basically any food media is a lie lol there is tons of stuff behinds the scenes that you wouldn't do when cooking normally esp in a professional kitchen
probably doesn't really matter - not many contaminants are going to survive within a jar of salt. also, if we know anything about Chang, he's primarily using this stuff on meat that's going to be cooked... I've been doing this for years when seasoning steak and I've never had any issues - again, not much is going to live in a salt container.

Salt's a dessicant, like honey. Any microbe you're gonna find in a kitchen will quickly die in salt. It's why salt's used to cure meats.
