BTW, once you silicon spatula all you can out of your Vita Mix, add water, save the diluted water/fruit puree mix and you can add it to cake mix/muffin mix/pancake mix to substitute the water for. I know that sounds obsessive, but utilizing that water is conservation. I used to think my grandmother was OCD about using EVERYTHING, but I get it now.
We are currently freeze drying almost 20 gallons of home made vegetable soup half has turkey included. Once we have completed that task, I would like to try this fruit bar idea, maybe add some granola and nuts, possibly yogurt as well? Lots of possibilities.
I like that idea. Did you get a chance to try it yet? I was also thinking of adding oatmeal to add a little more "BODY" to the bar instead of having it like a Styrofoam texture, and be more filling as well.

Mountain House also makes chili Mac and cheese, grated cheese, etc. But doesn’t all of that have fat? I have tried fat free Milk and oat milk and although they both freeze dry well, I really do t know what to expect long term.

I thought up the "Smoothie bar" on my own, but the dividers really would help. Also, was the batch ~40 hours because of the power outage? I have always been running about a ~20 hour run regardless of what I put in, but I have heard of candy taking 4 hours. Definitely need to learn more about run times. I did have the problem of my smoothies swelling when finished.
40 hours probably due to fruit high sugar content. Anything high sugar will take longer. Also, a heavy puree has low surface area compared to something with more space between the pieces like shredded carrots etc. So the moisture will come out slower as well. Stay gold.

Have you encountered a manual advance on your machines? I just got mine 3 days ago. I did the bread test and that worked great. Then I did a run with fruits and I had a vacuum issue. Some how I managed to get into a manual advance mode. Any suggestions?

Forgive my ignorance but please explain to me why you always check for cold spots. What exactly does a cold spot mean? Are you looking for a desired temperature for the infared thermometer to be at, i.e. what temp is to cold, what temp is to high, what temp is just right. Is the 80 degrees as in below 32 degrees or is it 80 degrees which to me would seem high for something just removed from freeze drying, please explain. Thank You

I believe they're just a tad smaller than HR's pillows that were getting hung up in the door, causing vacuum problems. A bit pricey, but well made. I think they're worth it. As to drytime figures, I haven't done a apples to apples test. Retired@40 did, though and has a video on it, where he shortened his total time by approx. an hour! Added insulation via a pillow can only help.
I am freeze drying some pears. They have been in for over 50 hours and are still spongy when I test them. Will they ever dry and be crispy? If not, are they salvageable? Any suggestions?
Oh my gosh. My first freeze dry is blueberries that were frozen and I blended them up in the vitamix. I just checked on them and its a disaster zone inside my freeze dryer 😱 I am going to have a huge mess to clean! You guessed it, I didnt refreeze the puree first. Hi Brian this is Reba. I’ve been watching your freeze-dry shows and things. I am not on Facebook so I can’t join the Facebook group. I’ve been having trouble with my freeze dryer and pump. I’ve had my pump replaced. Then the machine had stopped communicating with the pump so it will turn on. So I call Harvest Right. They did an update on the programming. So now to freeze, then dry which is when the pump comes on and then the final dry. When you get to the end where you can release the pressure to check the moisture level in your food the pump is still running at the point where you can add more time or cancel. I have to cancel to release the pressure to check the food. When I talk to Harvest Right, they thought maybe I overloaded the tray which Ididn’t t because I watch your videos. Do you or anyone in this chat or yourself have a clue as to what it might be? I think it’s the freezer itself. Thank you for your help
I had a problem with my Freeze-dryer i think they said it was the compressor that was bad i had to ship it back to them i am getting it back tomorrow after about 7 weeks of it being gone apparently they are pretty backed up with repairs and selling a lot of freeze-dryers. The customer service was very responsive and they assured me it would be fixed so i would no longer have a problem with it.

Has anybody else had their oil less pumps fail? Less than a year and it no longer draws a vacuum. I was in the middle of a run and lost all the food. VERY UNHAPPY that the super expensive pump failed. 😡
Ours broke after about 10 batches or less. We had trouble with Harvestright trouble shooting it. But we were down all harvest. They finally had us semd the whple b
Finally sent the whole system back. We got it back after a couple more weeks with the same broken pump. They called to tell us what they found wrong. Sent a new one. It was maddening getten them to return our calls, emails and text. But not sure why they are difficult to work with. Only had machine for about 8-10 batches and it quit
Perhaps if the goal was to make a snackbar from berries, you could add some neutral oil and flour in order to make them feel less dry and brittle and more chewy? I love the idea of making these kinds of snackbars.

Concentrated white grape juice and concentrated apple juice make excellent sweeteners.
Use apple or pear sauce in place of the banana for a more neutral flavored bulk. Adds considerable sweetness too.

Next time combine peaches and blueberries they are a delicious combo. I have made many jars of blueberry peach jam and I can't keep it on the shelf.

Mine is from Harbor Freight and bulked up with plywood.
If we don’t have parchment paper for this recipe, or any other “sticky” recipe, like sliced bananas, would paper towels work????

If hey were not pre frozen they will run longer. Eventually they will be done, just be patient and let the machine do its thing

How do you store for short term? And what is short term for freeze dried? I noticed my apple slices started absorbing moisture within a day or so.
If it's just going to be a week or so, I use a ziplock bag with a moisture absorber.
This will do well short term because of the powder like texture. It will not absorb moisture as fast as an apple slice
