in the 70's my brother found an old maple tree tap on the forest floor in Vermont. Almost 50 years later, '19-20 was a cold winter, he tapped a tree in his Long Island yard, and got enough sap to make a bottle or so. He was very proud, I'm in California so had to take his word.

I want to share with you Joe, I've been making Keto Syrup and I've used a product called Maplene Maple Extract. It gives it an extra maple kick and its marvelous if you can find it. I appreciated the Xanthan Gum tip...that's good to know.

A word of advice. When you add xanthan gum mix with equal parts of water first or you'll get clumps and take forever to get out. First time using xanthan gum didn't realise until this happened.

Carbohydrates is a group that's not limited to just starches and sugars. Fiber is also a carbohydrate, with 0 calories. So yes, something can be a carb and have 0 calories, it's the correct label for sugar alcohols. That's why "net" carbs is a thing.

Just made this, this Sunday morning What I ended up with was a dark brown thick syrupy substance that's very sweet to the taste A bit less xanthium gum as it was a bit thicker than I care for. Going to try the fenugreek version next time. All in all a thumbs up but may need a few "tweeks" to suit my own personal taste.
@Jackeline Baglietto From what I can see, Joe's syrup pours out almost like root beer even after being refrigerated. If you try this recipe again, maybe try a little more xanthan gum. I am sure you did nothing wrong - it is just not as thick as regular syrup because there is no sugar/corn syrup!!! 😊
Never heard of brown swerve!+ excited! Trying to find a vegan keto milk tea boba recepie and I think your Brown Swerve is exactly what I'm looking for! will use Konjac rice as my tapioca pearls!
I would think the fat in the butter would be somewhat of a nuisance when the syrup is refrigerated. It would solidify every time, and would require that the syrup sit out at room temp for a long time to (sort of) melt the fat, or put the entire bottle of syrup into a bowl of very warm water to change the viscosity so it would pour properly. That's just anecdotal evidence based on having grown up in maple sugaring country, and having used pure maple syrup all of my 68 years, including now, even though I'm ketovore. I refuse to give up pure maple syrup until I find something so close, it's ALMOST convincingly good.

Also, I'm assuming it needs to be kept in fridge? Will it have an expiration date if put in fridge or in pantry? You gave some great tips while you explained the process. I appreciate it. I was wondering the same thing. Was going to watch the homesteaders to see how they did their syrup to find out. I think if he had a hot sanitized jar it could be kept in the cabinet also. But real chefs serve their syrup hot anyway.
Uhhh Its midnight where I am and I HAD to make these pancakes lol. Let me just say this….DO IT!! I used my dash mini pancake iron and it made three absolutely perfect little round fluffy pancakes. I had a bite and my kids ate the rest 😆 . Tomorrow I might have to tackle the syrup! Its hard to find a good syrup that doesn’t taste like chemical. Joe, your recipes are the best. Yours is a nice recipe but I only use 6 ingredients and it tastes exactly like maple syrup. I use regular Suerve, maple flavoring, vanilla flavoring, a pinch of salt, water. a bit of Xantham gum and that's it. I find the artificial butter flavoring alters the taste too much for my liking, if I want butter flavoring, I will add it to my pancakes or if I want it in the syrup, I use ghee or Keri Gold butter (The butter makes it taste exactly like Ms. Butterworth). I store the syrup in my frig if I add butter or on my counter if I don't and do not have any problem with crystalization other than around the lid but the syrup stays crystal-free (I do find crystalization when I add the butter, but a quick trip in the microwave dissolves any crystals) and it tastes EXACTLY like maple syrup every time. Thank you for sharing your recipe.
Just made this for the first time - good stuff. I air-fried some pork ribs and dipped them in the maple syrup and they were really good. Think I'll add some liquid smoke and sesame oil for an asian twist next time. Maybe a pinch of ascorbic acid, too, for a heightened flavour profile. .

As someone who grew up in pure maple syrup country, and has a former BIL in the business, I'd be intrigued to see how close I can come to matching that unmatchable flavor. I'll have to use monk fruit sweeteners, though, because Swerve makes me very ill (oligosaccharides and I do not get along at all!)

I use a combo of 3 different sweeteners. Equal amounts of each. I use allulose, bochasweet & swerve. Bochasweet is my FAVE but very expensive so I do it this way cz I HATE the cooling of erythritol. Mix well. In place of swerve, if you use another blend of erythritol like monkfruit/stevia & erythritol blends, that will work too.

Sorry but as someone who grew up in the northeast, nothing beats REAL proper maple syrup from NH or VT. But keto sigh. Gots to do what you gots to do.

If you add fenugreek powder like a teaspoon, it will taste 100% maple syrup :)

I found adding a bit more salt really brings out the sweetness (but compromises the smokiness from the cinnamon)
If you can get your hands on Crescent Mapleine use that instead of the maple extract- just way less because it is super concentrated.

Tip: cornstarch is a good replacement for xantham gum. Same measure.

Corn starch is... starch and it is 100% carbs on its weight.
