The Boo being Abby theory really doesn’t work on two aspect: the time period of each movie, and the eyelids on the characters; Abby is monolidded, and Boo has double eyelids which tells me different family origins/ethnicities. If anything Abby is more similar to Agnes from Despicable Me.

Encanto takes place in the early 1950s it just wouldn't work . Pepa was born in 1900s Isabella in the 1930s and Mirabel a few years after Isabella . Turning red takes place in 2002 , completly trashing the theory
