    Hey Dale. Autolyse is just the part when the moisture in the flour mix becomes evenly distributed by the flour just soaking up the liquid. Have a very Merry Christmas, Dale!!

    I can't wait to try baking sourdough in a pullman, my husband doesn't like the heavy crust on my regular sourdough..Thank you Dale. Pullman pan I bought measures 13 x 5 x4.5 will use all of your recipe.

    Good Morning, Dale & Angel...
    Believe it or not, I recently came across the unopened envelope with your dehydrated sourdough starter within! I'm pretty sure it's still viable since it has been kept in a suitable place? I'm hoping that I'll finally have the time & ambition over this winter to employ it in a loaf or two of the ordinary sourdough bread.
    Like so many others here, I miss seeing you at The Cabin. I sometimes re-watch an adventure or two and they always avail me comfort in these trying times, thank you.

    P.S.
    I just read that if you use honey - it accelerates the fermentation and rise.
    Maybe then less dough would have filled your Pullman pan?
    That's a beautiful dough, just seeing it makes me eager to start my own bread making again!

    It sure looked good. You’re probably right that the full recipe would have been perfect. But the most important question…was it yummy?! I’m sure it was.
