    I think the most important part of making something gourmet is that it is fundamentally the same dish - and in this way, Jamie and Barry did better than Ben, imo. Ben's previous attempts looked absolutely delicious, but they were nowhere near reminiscent of the dish they were supposed to be a gourmet verison of. Well done!

      Yea. The closest Ben got was the beans on Toast. Because while it was more than just beans it was beans on bread and it looked delicious. I think it's just that Ben disagreed that the point of the series was making the thing Gourmet instead of taking the base item and making something entirely different. Like when I think Cup of Noodles gourmet I don't think Ramen. I think something really fancy that is still at it's basis a cup of noodles. I was expecting that at the end he would like you do fill it with hot water and you would have this amazing cup of noodles.

      @@redholm Exactly making gourmet ramen instant noodles isn't just making homemade ramen. It's adding a few key items to take it to the next level, or taking the basic ingredient and using it in a way to create something completely different.

    To be honest, when I hear "it's gourmet" I always end up thinking "it's been made stupid", and that presentation absolutely delivered.

      Agreed. My immediate mental picture of gourmet cheese and crackers is a single cracker shard curved over a daintily arranged stack of cheddar, blue cheese, cream cheese of some sort and a drizzle of fruit compote.
      In the end, it would look similar to a dish Jamie made once, but I don't recall the episode. As noted then, it goes against everything Jamie stands for - miniscule portions of pretentious nonsense that you pretend tastes great when in reality you're looking forward to getting an actual meal on the way home.

      Not in the French meaning though. And by the way, when they say gourmet is to make it for someone who is gourmand, that’s not really correct. The two are not synonymous (to me, a gourmand is someone who likes to eat… usually a lot of everything. Something that is gourmet is delicate, not usual or ‘pedestrian’, but with effort, although something doesn’t have to be interfered with necessary, as something can be gourmet without doing anything to it at all).

    Yes. It’s gourmet. First, it looks fancy and second, the boys transformed ordinary ingredients into something more elevated. That makes it gourmet in my book. Great job Jamie and Barry!

    What Ben don't seem to get about making something Gourmet. It's making the same dish but bring it up a notch. Make it fancy with more flavour. Not a completely different dish with elements of the original dish. For me the guys nailed it.

    I think the expectations of a “make it gourmet” series is best described as a rebranded Level Up from your old fridge cams. The Normals did an awesome job with it! We end up with the same dish, a bit fancier, but recognisable and close enough to the original dish that it’s instantly recognisable. Ben’s dishes were more likely to be served in a fancy restaurant but a bit too far removed from the original product.

      I hate that this series is called make it gourmet because imo they fail to make their end result a ‘gourmet’ dish. They often fail to replicate the brief and my definition of a gourmet dish is something that is classy and minimal, it’s of a higher quality than basic simple dishes but don’t require all their attempts of being fancy 🤷🏼

    The most gourmet "cheese course" I had was in a new 2 Michelin star restaurant De Nieuwe Winkel. It basically was a cheese "cracker" and creamed cheese made out of different cheese and some other things. It was reeaaaally good. This is definately what I thought of hearing this assignment.

      De Nieuwe Winkel is amazing! As a fellow Dutchie I can agree that the cheese is nowhere as good as in the Netherlands. okay maybe France... But they already have wine and all the french cuisine. we claim cheese 😂

      @@lukemclellan2141 For me Gouda cheese is number 1 (I am born and raised in Gouda, so I might be biased 😂), but we also have Edam, Leerdammer, Friese Nagelkaas, Old Amsterdam, Beemster Cheese, Maaslander, Graskaas... and so on
      And by Gouda cheese I mean the real Gouda cheese 😉

      Where my head jumped to with that was that Barry wasn't auto-correcting portion size, so in his mind, Ben was eating "a few different" party-tray-sized blocks of cheese 'on his own', which would be a solid amount of calories. (Like, a 100g or 1/4lb of cheese is typically around 400 calories, so if Ben's eating three of them, that's 1200 calories just on the cheese, versus Ben knowing he can just cut the cheese down to one or two ounces (28-56g) per cheese,)

    Yes! THIS is what I was thinking is what theyd do when I first saw the "Make it Gourmet" series! They still made a cheese board, but it was elevated with the produce they used and the way they presented said food. Can you do this again but in this method?!?!

    A friend of mine had his WEDDING cake made out of cheese!! There were some amazing cheeses and some preservatives and pickles that were amazing that I would’ve never have brought myself!

    Had you thought of a ‘fromage fort’? My Great Aunt, who was from Marseille, used to make this. She would take all the left over cheese and would put them in a blender, starting with the hard cheeses and moving to the soft. To this she would add 4 cloves of garlic, a large glass of dry white wine and some ground black pepper. All blended together she would put some in the freezer for another day then the remainder we would have as a cheese pate with crackers or my favourite, onto some slices of left over baguette and put under the grill. Fantastic! It also fits with your food waste brief. I mean how many times do you throw away those bits of left over cheese that have gone a bit funky? Great to use up a mixture of cheeses left over from a dinner party or Christmas. Give it a go boys.

    I definitely think they did. When I think "cheese and crackers," I think about crackers right out of the packet, and cheese right out of the wrapper. By making fresh crackers, compound cheeses, cooked cheese, blowtorched cheese, and a fruity accompaniment that is more than just a bunch of grapes on the stem, they definitely elevated it. I got some ideas to play with, and enjoyed watching you all enjoy the food.

    Jamie and Barry said it perfectly. Ben kept changing the brief and never went anyway near the original briefs and then made entirely different dishes that already existed. Delicious looking and probably amazing tasting, but not what was the brief.
    While I would have preferred different cheeses, this actually fulfils the brief and looks kinda cool. Good job gentlemen!

    Yes! Thank you Jamie and Barry! I enjoyed Ben's attempts with the previous episodes, but this time the original dish planned was "upscaled" to make it gourmet, not turned into a fancy dish that had similar properties to the original (which was what Ben's attempts were like).

    Yes! So glad to see a little bit of the behind the scenes brainstorming. I think where Ben had previously gone wrong in this format is that for the majority of people, making something homemade instead of using prepackaging is in fact gourmet to us mere mortals… I mean normals ;) Edit: deseeding a pomegranate in water! Game changer!

    Before this episode I would almost have used "gourmet" and "pretentious" synonymously on this channel. Jamie and Baz have pushed the definition of Gourmet for me with this without hitting pretentious so I say yes, they succeeded!

      Gourmet essentially means involved delicate and high quality. Not pretentious. A small wague filler seared to perfection served with a quernel of citrus jelly is gourmet but its not particularly pretentious
      Do the same on a salt block and add 100 words to why citrus jelly will cure your cancer or smth and bam you have smth equally gourmet but its now also pretentious

    The most surprisingly delicious thing I’ve ever had on a charcuterie board, was at a brewery on Lake Superior in Minnesota. They had locally caught and smoked lake trout as one of the board’s components. We’re not big fans of fish, but tasted like some of the best bacon.

    yes they did. My definition of gourmet is something that is the same thing as what you started but with the effort and quality beyond what I could normally be bothered to produce that increases the presentation, taste and texture. In other words, freezer pizza is basic, take and bake or simple home made dough pizza is normal, but authentic 3 day rise dough and top quality toppings that use weird ingredients that balance out to a perfectly balanced pizza would be gourmet. example:
    home made simple dough pepperoni and green olive pizza using standard pizza sauce and mozzarella cheese, I can make this excluding bake time with 4 dishes and utensils used in about 30 minutes.
    vs
    3 day dough with the sauce base being home made BBQ sauce (spicy but lightly sweet), topped with Jarlsberg and Tillamook cheddar cheese blend, roasted chicken (jerked chicken is the best), charcoal grilled jalapenos, charcoal grilled red onions, and the dreaded pre roasted until lightly caramelized pineapple. This takes days of waiting time, and hours of working time, and 3 different cooking methods to produce for me but is definitely gourmet
    if the brief is pepperoni pizza... then the 3 day dough, choice of pepperoni, choice of other toppings, and choice of cheese would make it gourmet.

    Absolutely nailed it boys! To me after you’ve “made something gourmet” it should somewhat resemble the original, involve fancy ingredients/techniques, give a similar taste but be different. One of my favourite recent videos!

    They followed the brief! As for Gormet, I believe everyone normally thinks of it as something that is your average thing like a pizza and then elevates it with different ingredients/techniques to still be a pizza, but tastes so much better because of the extra work or changes to ingredients.

    As I'm watching Barry and Jamie plate up at the end, I had this flash back from YEARS ago when Barry would do his "artsy" plating. Great job, guys. Makes me want to do the same thing for a lunch during this horrendous heat we are having. Thanks for another great episode. To answer your question: Definition of gourmet is "A connoisseur of fine food and drink". Definition of connoisseur is "someone who takes their food considerably more seriously than most". So in light of these definitions I would say the guys definitely took this to the gourmet level.

    Would love to see a challenge where the normals think it's a normal challenge but the curve ball is that it gets swapped and the three have to cook the other's dish. Just to see them panic

      This sounds familiar, I think they have done that, or at least something similar. I believe it might have been a curveball during a challenge before. But it was not that they had to make the others dish from the beginning but they had to finish it for them. I could be wrong though. I would love to see them do it again, as a video by itself.

    I would love to see some bavarian "Obazda" on this! it's a perfect cheese cream made from camembert, cream cheese, butter, paprika, onions and a splash of beer.
    it's really, really good, especially with a prezel, but godly with any bread of choice.
    trust me, try it!!

      but I am obviously very biased, just because I think it's one of the best foods in the world that does not mean everyone has to agree ;-)

    I guess I'm both surprised and happy to see that the vision for a gourmet cheese and crackers board is not just... charcuterie. They actually made things, instead of just doing a board with really fancy cheeses and meats.

      But this wasn't gourmet. This was nachos with crackers.
      Gourmet is a really nice charcuterie board with unique insights, like coffee sprinkled on a specific cheese to change its consistency. This was simply ridiculous, and they should be ridiculed for doing so.

    I absolutely love scamorza cheese! There's a local pizza and pasta joint that serves an appetizer that's scamorza cheese melted over diced tomatoes and herbs and served with sliced of toasted French bread. It's so good.

    As much as I absolutely adore Ben for his deep knowledge and skills relating food, sense of humour and everything, I must say that the boys were better at leveling up things to gourmet (tho, cheese board seems itself to be gourmet). The plating was more pretentious than gourmet, imho.
    Ben seemed so salty and hurt in this episode, especially at the beginning, questioning their choices and roasting them. But boy, as much as I like you, you made whole new dishes back then, it wasn't leveling up something existing, but making something new, barely resembling the original. 😅 You are knowledgeable and creative, but I'm sorry, it was kinda too creative. I would totally support new series - "Ben gone wild", "Ben's playground" or some name with creativity, because in itself these ideas were great, but not necessarily as gourmet versions of something else. I'm sure such series would be delightful to watch. 💜

      Sometimes a nice plate of good simple food prepared properly outshines some gourmet creation which uses the same ingredients. I've seen some totally awesome dishes prepared with Pacific Salmon, but I prefer it just lightly smoked, sliced thin and served with a nice bread, with cream cheese, thinly sliced onions, dill, and capers on the side.

    Love the episodes and huge shout-out to everyone who makes them possible. This episode, however, how shall I put this... If I hadn't watched it from beginning to end, I'd have thought that Jamie put together a simple cheese & crackers board and Barry, in his usual Barry-ness, knocked it onto the floor and they quickly scooped it back up and onto the table. Ben being none the wiser. Brilliant!

    Not going to lie I personally loved Ben’s “gourmet” dishes, although they weren’t new or the original dish it was great to see similar dishes and ingredients to things we know, like beans on toast but taken to a different place and it shows me a dish I’d never seen or heard of before

    I think it's important to clarify the difference between a gourmet (someone with refined taste who enjoys fine food and drink) and a gourmand (someone who is extremely and often excessively fond of eating and drinking). I feel that Ebers is more a gourmet than a gourmand. Regardless, I definitely think this is gourmet given the presentation being done at your table.

    Yes! This is what I wanted from this "make it gourmet". As much as I loved Bens fancy baked beans dealio, it wasnt what I wouldnt put under "make it gourmet". I would like the casoulet as its own recipe, love it. But its stretching the criteria I think. Get a tin of Heinz and go from there, or even more, one with the little sausages in the tin!
    This is that. Delivers. Gourmet cheese and crackers!

    Loved it! I was wondering how you make cheese and crackers gourmet than just "fancier crackers and cheese" but they got really creative with the presentation and the THEATER, which really upped it! Great job guys!

    That was genius boys! Loved the plating at the end, Ben was so surprised. Although as a cheese fan I would argue you stylised normal cheeses rather than going for some interesting, traditionally made variety of artisan cheeses. All a bit soft. But saying that 100% loved the plating and theatre

    Had a glorious cheeseboard at the hotel in Uig on Skye. Freshly baked crackers and a variety of local cheeses from the highlands and islands, quince jelly, grapes and some lovely chutney. Everything was so fresh and well balanced.

    I love me some Cheese and Crackers although I usually choose baguette over crackers. I also want some chorizo and other sausages. Add to that some more dip with pesto and chilipaste and some cucumber and red/yellow pepper sticks. For cheese I also add some aged Manchego and/or Comte.

    I'm not sure the plating was gourmet so much as "I tripped on the way to my picnic and scraped the result out of the bottom of my picnic basket onto a board"... but the cheeses sounded delicious!

      They took that out of some of the most famous 3-star restaurants in the world. There's one where they literally paint the table with the several chocolates, creams, honeycomb and other stuff that goes into the desert to make a sort of abstract painting. I personally don't like it, as I'd be against having to scrape/lick my desert off the table, but it's theater, for sure. Again, not good theater IMO, but still theater.

    Gourmet has three different meanings to the world as a whole from my experience.
    #1 Dish is relatively unchanged but every ingredient has been elevated in quality and prepared expertly.
    #2 Dish resembles the original but ingredients have been changed or swapped out for rarer, more expensive ingredients.
    #3 Dish takes all the original ideas of the original dish and just turns everything on its head. (Grant Achatz, Heston Blumenthal if you need an idea of that)
    i think Ben's idea of gourmet falls under the thinking of #2 and #3 while the normal's idea of gourmet falls under #1 and #2.
    and nothing wrong with either side. so all the "make it gourmet" dishes have been gourmet just with different intensities of the above types.

    I'm here to make statements and ask questions!
    The first statement- Ben I love you!! it feels to me that in the videos of the last few weeks the guys are chewing you a lot more for some reason so I'm here to send love! you are great!! (And the beans on toast were great too!)
    Second statement - I want Pass it on back!
    And in this context, the first question - when are amusing videos like pass it on that come back because 3 months have passed since the last one and I miss the laughter and the craziness? (and yes I know there was a live one but a lot of time passed from it as well)
    Second question - is it possible to get more 'battle' videos on ability badges? You left it for a long while and I know you did one recently but it feels like ther need to be more and definitely there were comments with really good suggestions (two I remember very much is kitchen safety- dishes and food, and how to fix miss-hap that happened like overcooking or over-seasoning something )?
    Third question because it was not explained in the video and its first time I hear about this thing, what the hell is Spelt flour???
    P.s. The picture you chose for the video made me press for a moment because I thought Berry had a haircut and it made me sad, the long hair is stunning for him
