- As Chef Ranveer Brar gushes about the sheer scale of Kerala’s cuisine, the Sadhya, a vegetarian Brahmin feast is in order. Originally inspired by the Thaal culture of Gujarat, Ona Sadhya could have as many as 64 items, all served on a plantain leaf. However, the one he creates for us is smaller. He first cooks the vegetable Thoran with its innovative use of coconut. He then demonstrates the Pachadi, a kind of raita; one from pineapple and another from the underrated beetroot. For something sweet, he chooses Adai Pradhaman - a heavenly combination of coconut, palm jaggery and cardamom. Apart from these dishes, Sambhar, Rasam and Avial are in prep too. About Sadhya:
Sadhya is a traditional Kerala meal, essentially vegetarian, served on a banana leaf. A typical Sadhya can have two to three dozen dishes, which may sometimes go up to 64!

That dish 'pachhadi' is common in Andhra cooking as well. The word pachhi means raw. Most pachhadee are made with uncooked ingredients. As newer ingredients (veg or fruit) have been converted into pachhadee, some had to be cooked for consumption. So a pachhadi is a blend of semi cooked or raw ingredients with a seasoning/tempering of the usual suspects like mustartd seeds, cumin seeds, whole chillies, curry leaves or coriander.. Sometimes methi seeds too.

Ur cooking is good , may be some difference from how authentic malayalis make it and how it is served in the leaf ( it does have a specific order were the dishes have to be placed ) and most importantantly u may revist on ur history lessons on the history of sadhya ....
