This is especially the case with rodents. Something that's not featured as much in this video about Filipino food is SOUR. Fried foods like that lechon kawali you ate? Expect some vinegar to go with it as a sauce (either plain, or spiced with small chillies, chopped onions, or even mixed with soy sauce). Same goes with Filipino Chicharron. Same goes with Tokwa't Baboy (literally means "Tofu and Pork", since it's chopped up block tofu and boiled pig, usually eaten with rice). HELLO VINEGAR! ^I was also surprised there was no SINIGANG (not to be confused with sinangag, which means fried rice), which is a savoury sour Filipino stew. While there are different souring agents that could be used, sampalok (TAMARIND) is the most popular. It's a home cooked Filipino staple alongside the more popular adobo. No vinegar in this one. Not as obvious, vinegar is also used in that Pork adobo you ate. Bro probably would like a Filipino breakfast though. Sweet savoury Longanisa (unless it's the Vigan longanisa, which is the only savoury Filipino longanisa I know), beef tapa, and fried eggs served with a bed of garlic fried rice. Tuyo (dried fish) might be more of an acquired taste. Expect vinegar as a sauce AGAIN. Nice soft slightly toasted Pandesal (a staple Filipino bread roll) with a cup of coffee is a simple pleasure too.
