Same goes with Tokwa't Baboy (literally means "Tofu and Pork", since it's chopped up block tofu and boiled pig, usually eaten with rice). While there are different souring agents that could be used, sampalok (TAMARIND) is the most popular. It's a home cooked Filipino staple alongside the more popular adobo. No vinegar in this one. Not as obvious, vinegar is also used in that Pork adobo you ate. Bro probably would like a Filipino breakfast though. Sweet savoury Longanisa (unless it's the Vigan longanisa, which is the only savoury Filipino longanisa I know), beef tapa, and fried eggs served with a bed of garlic fried rice. Tuyo (dried fish) might be more of an acquired taste. Expect vinegar as a sauce AGAIN. Nice soft slightly toasted Pandesal (a staple Filipino bread roll) with a cup of coffee is a simple pleasure too.
