That is what we call a spike bill,they make excellent gar balls .For something different make a red gravey with onion bell pepper and a lot of garlic,put a bunch of the balls in the gravey one simmer to your likening top with green onion serve over rice.

If you go fishing you prepare to keep what you catch, regardless. Unless it's state law and not permitted to take. That catfish you caught was within regulations. You catch you eat, us poor people eat. We loved you until that point. Your poor people like us. Don't catch what your not willing to eat. That gar fish is great! Lean to catch, clean and cook!!

Try putting an aluminum tent over it on the grill. Might keep it moister and not as chewy. Maybe uncover it for the last few minutes.
