    Lets see how to make Kaju Pista Roll.
    Ingredients
    Cashews - 500grams
    OR
    Cashew Powder - 5cups
    Sugar - 250grams
    OR
    2.5 Cups
    Water - 1&1/4th cup
    Cardamom Powder - 1tsp
    Ghee - 2to3 tbsp
    Chandi Varkh (Optional)
    Chopped Dry Fruits
    -Pista 1/4th cup
    -Almonds 1/4th cup
    Gulkand 2tbsp
    Dry fruit Powder - 1/4thcup
    Method
    1) Grind the cashews into powder , sieve the cashew powder.
    2)In a heavy base kadhai, add sugar,water and cardamom powder and cook it till sugar dissolves and it gets thick ( ek tar ki chasni)
    3) Now add in the cashew powder and mix well, stir continuosly so that the mixture does not stick the base.
    4) Turn off the flame once you add in the cashew powder to avoid burning , the kaju dough will cook in the chasni 's heat.
    5) Keep mixing for 10-15mins and you will see that the mixture slowly gets thicker.
    6) Rest for 2mins and then transfer to a greased thali and knead the dough when it is slightly warm.
    7)Now divide the dough into 2 portions , 3/4th and 1/4th. In the 1/4th portion add in chopped dry fruits, gulkand,and dryfruit powder , mix well and make a cylindrical log out of it, you can use ghee for this purpose.
    8)Roll out the remaing 3/4th kaju dough and add in the filling and roll it up .
    9) Decorate with chandi varkh,and cut into pieces, now you can top up the rolls with chopped pista, kesar strands and varkh.
    Kaju Pista Roll is ready to be served!
    Tips :-
    1) To make it less sweet you can use 2cups of sugar or 1& 3/4th cup of sugar, the proportion of water will also change accordingly.
    2) Dont over cook the chasni.
    3) Stir continuosly once you add cashew powder to the chasni.
    4) Preferably use a heavy base kadhai.
    5) Once you cut out the kaju pista roll , let it dry for an hour.
    6) Dont add too much of Gulkand or gulkand syrup or the filling will turn wet.
    7) While garnishing , garnish with only kesar strands and not the soaked kesar water or milk otherwise the rolls will get wet, reducing its self life.
