Pro tip for the garlic if you have an air fryer!Do exactly what you did and put it in the air fryer for 12 minutes. Perfect, and less time and power used!

Would the loaf hold up if cooked on cooling rack in order to get smoke on the bottom?
The issue with using a wire rack is the meat will sink into the rack making it difficult to remove once cooked.
Roughly how long was it on the smoker @ 250?
About 2 hours. Finished temp needs to be 160
