    Recipe
    Ingredients for 4 portions
    - 2 tbsp grapeseed oil
    - 1 brown onion, diced large
    - 2 carrots, peeled and diced
    - 2 potatoes, diced
    - 1 green apple, diced
    - 600ml chicken stock
    - 1 packet S&B Golden Curry
    - 2 chicken breasts, sliced in half
    - 200g flour
    - 2 eggs, beaten
    - 200g panko bread crumbs
    - Oil for frying
    - 3 spring onions, sliced thin
    - Salt to taste
    - Steamed rice to serve
    Method
    1. Start by cooking some rice in a rice cooker to serve the curry.
    2. Heat the grapeseed oil in a large frypan and sweat off the onions and carrots with a pinch of salt.
    3. Once they start to soften, add the chicken stock.
    4. Now add the potatoes and simmer for 15 minutes or until the veg is just starting to soften.
    5. While that is cooking, heat the oil in a cast iron pan for frying the chicken katsu.
    6. To crumb the chicken, season it with salt and then dust it with flour followed by a dunk in the egg and finally the panko crumbs.
    7. Back to the curry, after the potatoes and carrots have been cooking for 15 minutes add the apples.
    8. Once the stock comes back to a boil, add the Golden Curry and stir through.
    9. Cook the chicken katsu in the oil at 170°c until golden brown on both sides, about 7-9 minutes.
    10. Once cooked, let it drain on a wire rack and season it with salt.
    11. To serve, add the rice in a bowl and the curry next to it, finally slice the chicken katsu and serve on top.
    12. Garnish with spring onions.
    13. Enjoy!

    I love how Andy calls himself out. I noticed how the board was moving on him. Most chefs wouldn't say a word about it but he used it as a teaching moment. Same with the egg shells. Great job. Excellent video.

    The way you explain things is helpful to me, thank you. Explaining that you’re not looking for color on the carrots, just sweating them - that sort of thing is SO helpful for those of us who can’t cook.

    Andy, thank you for introducing Japanese chicken katsu karē. Please enjoy pork katsu, beef katsu, fried prawn, hamburg steak as toppings as well. I think adding soy sauce , lea & perrins sauce and ketchup and pitting karē sauce into the blender would be better.
    Letting it rest overnight in refrigerator is also a great tip.

    I made this.
    It was absolutely delicious. I did omit the apples though but even without it was amazing. I was fortunate enough to find the exact Japanese curry powder.
    The only issue I had was that I overcooked the veggies. I think with a little more practice I'll be able manager my time better. But everyone loved it. It was so good. Definitely a keeper!!!

    Oh man!! This is my newest favorite also!!
    Had it first time last summer, and have made it a few times since!!
    A tip to anyone who likes to make things in bulk.
    The curry sauce with the carrots, potatoes and onion mix does freeze very well for quite a while.
    As does the fried up chicken.
    You can basically pre cook all this, then reheat it for a quick dinner at your convenience.
    Do recommend air frying the chicken upon reheat.

    This is my favorite Winter comfort meal! I use the S&B powder because I don't like the mouthfeel of the roux cubes, and because it's more versatile. But regardless, S&B brand is the way to go!

    Japanese here. Instead of adding big chunks of apple, we like to grind it up to a paste like apple sauce then add it in. You can also add a little bit of dark chocolate, some people do that as a secret ingredient.

      Interesting! I normally use honey for sweetness and add star anise and fenugreek for savory. Will have to try chocolate!

      Ive experimented with grated apple and other grated fruits in my curry and found that the sweetness is not missed when not including it and the flavor is better without the fruit in there. Only add fruit into your curry if you know thats what you want

    This S&B curry mix is quite the magic ingredient that turns the ordinary potato/carrot/onion mix into this truly divine tasting, quintessential Japanese dish. I have some wonderful memories of Japanese curry from my days in Tokyo and I wondered if I could ever taste that amazing dish again. Thanks to this curry mix, Japanese curry is a breeze and takes no more than 30 minutes. Great dish and a truly amazing product!

    I have made this several times and its sooo good. I got the medium hot version but it was too mild for me so i bought the hot version and even that was mild for me but more flavorful than the medium hot so i add chilli powder to the dish and it makes it so much better. Using beef brisket instead of chicken is also very very good.

    one of my fav's!! thanks Andy :) Pro tip, if you use a spray bottle to moisten the panko before you crumb, crisps up awesome, and gives you time to remove the loose crumbs before they overcook in the oil :) That curry also goes awesome with the aussie classic curry sausages :)

    I have lived in Japan for many years and I can tell you all he's got the cooking of this dish for home consumption down to a tee.     I like to do half rice, kare over the rice. Have shredded cabbage, chicken over cabbage and lemon wedges to flavor the chicken and cabbage half. The acidity is really nice with the richness of the fried meat and kare.

    The best Chicken Cutlet Curry’s I’ve ever had was both in Japan! One is from Coco’s Curry House in Okinawa, Japan and the second was a street cart in Mainland Japan! One was a well known restaurant and the other was literally just a guy who brings a cart to high popular areas late at night and he said he also goes out during the late afternoon rush when people are going and coming from work or wherever they are going. Just can’t get enough and I can’t wait to go back to get my hands on it again! lol

    Been my favorite meal for 30 years. I learned how to make it from friends that served a mission trip in Japan. Absolutely the best. Vermont Roux is excellent too.

    Katsu curry is one of my favorite dishes as well... can't go wrong. Looking forward to more food adventures in 2023!

    Tried making this the other night was awesome! Reminds me of curried sausage from when I was a kid, I think next time I might try add sultanas to it, as my parents used to do that when I was a kid
