How too ruin a great filet of ostrich! The first sear is done just like he said. If you don't want rare, leave in longer. I don't know why he removed juice from the surface with paper towels? Season with salt, pepper, onion and garlic powder.Set aside. Add minced garlic and tyme with small amounts of butter and heat to sear steak. Remove steak and reduce temperature. Add a burgundy wine and simmer to a light reduction then add whole cream. Reduce sauce until desired consistency. Remove tyme, plate meat and top with sauce. Yes you can overcook any meat.
You seem experienced in exotic meats and wild game. Where you contradicted yourself is when you added butter. Not sure why some people feel a need to add butter, and you should not promote that heart-destroying addition. Viewers, please do not add butter to any red meat or poultry.

This particular one came from Tampa. I picked it up when I was buying the kangaroo, but I've also gotten ostrich from West Palm Beach at Wild Fork
Australian outback.
How long you cook it
Varies from thickness of the Steak but typically once you have a hot pan and oil... then 2 Min to 2.5 Min per side. 90 seconds for Rare
I can never allow myself to waste the meat juices :(
