How super cool is that!! In this day & age where food is machine-made, hybridized, and genetically-modified; it is really refreshing to see artisans making candy the old-fashioned way probably using a method that has been there for hundreds of years since this is the Middle East. And to see the senior chef working the dough along with the young chefs is so endearing :) I hope their business thrives and people appreciate their hard work.
benchkey Cook the sugar until it's caramel, cook the corn starch until it just starts to change coulor (not all the way to dextrin). Follow the video and have two other strong folkes to help. Looks about like 1kg corn starch (can't have too much) to 10kg or more sugar.
Jimmie Franz the first step he took flour to toast it in round rotation heat until takes all humidity than they add Gee butter than throw it in big plate than put the candi and started to roll and stretch !
It's called "pişmaniye" its an turkish/bosnian sweet in fine strands made by blending flour roasted in butter into pulled sugar Allthough the texture is similar to Cotton Candy. It is widely known as Turkish Cotton Candy
Sheepy007 if the bakery Ashley Fernandezworked sold real baked goods to real life people it does in fact make it a real bakery. No matter where you are in the world there is no excuse to be dirty

I make cotton candy but this is truly special. Is a recipe available? Don't speak the language so really don't want to guess on ingredients.
