Leviticus is super relevant when you realize the sum total of Jesus' teachings is he wants us to live like a levite... If you actually analyze how the prophets (who were head preists, levites) and the book of Leviticus it all mirrors Jesus life and how we are to take care of our own body as a living sacrifice and to understand what is good and what is bad. I think it is rather literal whereas your approach is flaoty and philosophical, just let the scripture speak. Biggest reason we dont do animal sacrifices is we have global currency, the mark of the beast is in effect, so we tithe ten percent. But in the absence of a global economy the animals were their currency and livelihood so they sacrifice the best one for God, just like how the firstborn son belongs to God. Let us value scripture instead of "defending" it or putting the new testament over the first like it supersedes instead of being harmonious. God also gave us all the Earths beings to subjugate, which removes moral guilt for "killing animals" when this is the natural order.
