What to do with Bolting Onions in Spring

What are you going to do when your onion start to bowl in there prematurely harvested. This is my Vidalia onions in the zone 7B bolting due to the weather that has fluctuated in the past 2 to 3 weeks.

You can snip off the seeded end and eat as chives. I put them in freezer and use for soups etc

Snip the top bud off, it will push the bulb to grow. I leave 3 or 4 onions over winter and let them produce seeds that i save and use. I also save one or two carrots over winter for seeds the following year

Would the onion bulbs continue to grow if you cut off the greens and stick them back in the dirt?
