The pink sauce in Yen Ta Fo noodle is made from fermented tofu, not from red bean. 😊😊😊. The soup would be more flavour if you add the condiment made from vinegar and chillii, you can find it on the table.

With the lotus seed you have to peel the bitter skin and also remove the little green baby plant in the middle. It's actually taste better if it's aged more with the skin starting to turn black.

If you have any chance to visit Thailand recently. I reccommend to another province than Bangkok such as Huahin or Khao-Yai. A very busy travel place but not too busy for having a good food. Good video btw. Happy to see you both in good vibe!
If you like all these Thai noodle dishes, there is a place in Thai town in LA, called Pa Ord noodle on Sunset blvd. The name translates to Auntie Ord. That place is pretty good, and the portion isn’t too big too, so you can try different dishes.
I ate at Jay Fai once about two decades ago. My friend and I went there in the evening and didn't have to wait. I don't remember what I ordered exactly (probably Pad Thai) but the price I do vividly - 500 Baht :-)

pay 3 star hotel food prices to sit in an old hot non air-conditioned shophouse at a busy car intersection where fans blow the outside exhaust fumes in. during covid this place had very few customers. despite many wealthy bangkok thai people they are rarely interested in eating there. the realistic price for that omelet is no more than 340 baht (10 USD) the crabmeat used is akin to that sold at Makro (Thai Costco equivalent) and costs about 3 usd. the prices there are 3-4 X normal for that style in bangkok.
