      Baby Back Maniac I'll give you a little something that you probably didn't know but I'm sure you will enjoy. Did you notice the hat he was wearing? I'm pretty sure that was a " Rainier" hat. Rainer was a Northwest beer made in Seattle for decades but no longer. The beer was very popular in the NW but what made it great was the commercials. They were hilarious and greatly missed. So for me every time I saw that big " R " it put a big smile on my face. Hurry and put up another vid,these are great.

    That was great. I hope Hank can explain getting a smokey flavor while getting a clean burn. I can't grasp that one.

    • @BabyBackManiac
      @BabyBackManiac  5 ปีที่แล้ว +2

      No fire is completely clean the whole time. You just want to minimize the dirty smoke as much as possible. We only have to make that mistake once before you realize it’s important.

    • @HanksTrueBBQ
      @HanksTrueBBQ 5 ปีที่แล้ว +1

      The smoke flavor is there even though you can’t see the smoke. It is the combustion of the volatile organic compounds in wood that add flavor, not the combustion of wood fibers (cellulose), which happens at higher temps. I explain that in my book (“Barbecue, Fire and Smoke, available on Amazon)

    That's my WSM 18"/22" hybrid @0:57.
    You can't tell from this picture but I cut the bottom of the 22" kettle out to match the opening of the 18" WSM. It now functions perfectly as a 18" smoker with the original lid, a 22" smoker or a regular 22" kettle as the charcoal grate for the kettle is still in there. It's very versatile and I only have $120 into it as I bought both used. I use it several times a week.

    • @jhitt79
      @jhitt79 5 ปีที่แล้ว

      wharpig for me the propane ignition is useless as I like my coals on the opposite side of the table. I've removed it and blocked the hole on both of mine. I use a charcoal chimney and a hand held mapp torch if I'm in a hurry.
